Cookie Monster Cinnamon Rolls 💙🍪 (recipe makes ~8 large rolls) Dough: ¾ cup (180g) warm milk ¼ cup (50g) granulated sugar 1 packet active dry yeast (2¼ tsp/7g) 1 egg + 1 egg yolk, room temp ¼ cup (57g) unsalted butter, melted Blue gel food coloring 3 cups (360g) all-purpose flour (+ more if needed) ¾ tsp salt + ⅓ cup warm heavy cream to pour over the rolls right before baking Filling: 6 tbsp (85g) unsalted butter, softened ½ cup (100g) brown sugar, packed ½ tsp vanilla 1 tsp cinnamon 8 finely crushed oreos + chopped chocolate chip cookies (I just used chips ahoy) & oreos to sprinkle Icing: 6 oz (170g) cream cheese (block style, not spreadable), room temp ¼ cup (57g) unsalted butter, room temp 1½ cups (180g) powdered sugar ¾ tsp vanilla + extra cookies and oreos for topping! Instructions: Combine the warm milk, sugar, and yeast. Let sit 5-10 min until foamy. Add egg, egg yolk, food coloring, and melted butter, mix. Stir in salt and flour. Mix until a soft dough forms. Knead the dough on a lightly floured surface for 8-10 minutes. Place in a lightly greased bowl, cover, and let rise for 1-1½ hrs or until doubled. For the filling, mix the soft butter, oreo crumbs, brown sugar, vanilla, and cinnamon until combined/spreadable. Roll the dough into a large rectangle on a lightly floured surface. Spread filling evenly & scatter the chopped cookies/oreos all over. Don’t over stuff it. I like to use a pizza cutter to first slice 8 pieces then roll them each up tightly. (Or you can tightly roll the whole thing then slice) Place in greased 9x13 pan. Cover and let rise 30-45 min. Pour warm heavy cream over the rolls right before baking. Bake at 350°F (175°C) for 22-25 min. To make the icing, beat cream cheese and butter together until smooth. Then, beat in powdered sugar and vanilla until fully combined. Spread over the warm rolls. Oreo Cheesecake Bars 🖤🤍🖤 (recipe makes an 8x8 pan) Crust: 20 Oreos, finely crushed 3 tbsp (42g) unsalted butter, melted Filling: 16 oz (454g) cream cheese, softened (block-style, not spreadable) ½ cup (100g) granulated sugar 2 tbsp (30g) sour cream, room temp 1 tsp vanilla extract 1 tbsp all-purpose flour 1 egg, room temp 10 oreos, chopped 3-4 extra chopped oreos for topping Instructions: Crush 20 Oreos with a food processor or by hand and mix with melted butter. Line an 8×8 inch (20x20cm) baking pan with parchment paper and set aside. Step 2 In a medium bowl, combine the dry ingredients, the flour, salt, \*\*a\*\*nd cocoa powder and set aside. Step 3 In a pan over medium heat, combine the butter, vegetable oil, and half of the sugar. Stir frequently until the butter is fully melted. Once melted, remove from heat and set aside.
