RECIPE BELOW! One of my most favourite and comforting foods to eat in the world is the Pain Perdu. Pain Perdu is a way to use up any stale bread, soaking it in a milk and cream mixture and cooking it in a pan with butter, until crispy and golden on the outside. This brings me all the way back to my childhood, when my grandpa used to spoil us and make this for us, with all the love in his heart. To make it today, brings a smile to my face, as I remember peering over the kitchen counter, as he was making it himself and feeling as if I am bringing him with me into my kitchen. Pain Perdu… the most dangerous recipe on the internet right now. Soft brioche soaked in vanilla custard, caramelized in butter, crispy outside, melting inside… This is pure addiction. You asked for the recipe… here it is. Now don’t blame me if you make it every day. Save this reel, send it to your friends, and tag the one who would never share their French toast. Brioche loaf 1000 g Flour T45 630 g Whole eggs 18 g Salt 150 g Sugar 30 g Fresh yeast 200 g Fermented dough or trimmings 500 g Butter 82% Mix all dry ingredients with eggs (90% speed) for 5 min. Add butter in second speed for 7 min. Mix 5 more minutes until gluten forms (do not overmix). Rest 1 hour at room temperature. Rest overnight in fridge. Shape in a load mold and proof 2h30. Bake at 160°C for 25–30 min. ⸻ French Toast Soaking Mix 400 g Milk 600 g Cream 35% 120 g Egg yolks 150 g Raw cane sugar 4 g Vanilla pods Mix all ingredients together. Cover with plastic wrap touching the surface. Store in refrigerator. For Pain Perdu Slice brioche, soak well in the mix, cook slowly in butter until golden and caramelized. It’s so good. 📝 👇 Ingredients: - 1 loaf of brioche, ~8 1 inch slices - 6 eggs - 360ml whole milk - 30ml @grandmarnierofficial - 1.5 tsp vanilla or 1/2 a pod - 1.5 tsp salt - 15g sugar - 30g honey - zest of 1 medium orange - butter, unsalted for pan Method: 1. Mix eggs, milk, grand marnier, vanilla, sugar, honey, salt, and zest in a shallow bowl or dish until well combined (tip: use a baking sheet to soak all slices of bread at once) 2. Place brioche slices in soak for 2 minutes, flip and soak additional two minutes. 3. While bread is soaking, place pan on medium-low and add few tablespoons of butter 4. Cook soaked brioche 2-3 minutes per side checking after 2 minutes to ensure it does not burn (adjust heat if needed) 5. Dust with powdered sugar or a drizzle of honey to serve #frenchfriday

La petite recette de pain perdu qui fait plaisir avant le week end. Pour 4 personnes 1 brioche ( racie idéalement) on utilisera les croûtes pour faire une chapelure en les mixant et on la réservera pour une autre utilisation. On coupe en 4 cubes ou forme que l’on souhaite. On bat 3 œufs avec 30 cl de crème 20 cl de lait 1 demie gousse de vanille grattée ( pas obligatoire mais délicieux) et 60g de sucre muscovado ( aux notes de réglisse qui vont tout changer ) On imbibe sur chaque face la brioche et on la laisse gonfler dans la préparation 1 h. On la fait dorer à la poêle sur chaque face dans une noisette de beurre demi sel. On dépose ce pain perdu sur une belle cuillère de caramel onctueux au beurre salé ( ce ma recette de riz au lait vidéos précédentes ) On termine avec une chantilly muscovado c’est à dire 25 cl de crème liquide enrichie de 40 g de mascarpone et 40 g de sucre muscovado battu pour obtenir une crème onctueuse . #painperdu #frenchtoast #chantilly #muscovado Je veux voir vos photos !
