White Sauce Chicken Pasta Ingredients: • Chicken: 1½ chicken breasts, cut into cubes • Butter: 3–4 tbsp (for chicken) + 5–6 tbsp (for sauce) • Garlic: 1 tbsp, chopped • Mushrooms: 7–8, sliced • Capsicum: 1, cut into julienne • All-purpose flour (Maida): 1½ tbsp • Milk: 1½ cups • Cream: ½ packet (around 100 ml) • Cooked pasta: As needed (penne or fettuccine works best) Spices for Chicken: • Salt – to taste • Chili flakes – ½ tsp • Chili powder – ½ tsp • Black pepper – ½ tsp • White pepper – ½ tsp • Oregano – a pinch Spices for Sauce: • Black pepper – 1 tsp • Salt – ½ tsp (adjust to taste) • Paprika powder – ½ tsp • Chili powder – ½ tsp • Oregano – 1 tsp Method: 1. Cook the Chicken: • Heat 3–4 tbsp butter in a pan. • Add chopped garlic and sauté for a few seconds. • Add chicken cubes and cook for 2–3 minutes. • Add the chicken spices (salt, chili flakes, chili powder, black pepper, white pepper, oregano). • Cook until chicken is done and lightly golden. 2. Add Vegetables: • Add sliced mushrooms and capsicum. • Sauté for a few minutes until vegetables are slightly soft. • Remove chicken and vegetables from the pan and set aside. 3. Make the White Sauce: • In the same pan, add 5–6 tbsp butter. • Once melted, add 1½ tbsp maida and cook for a minute (don’t let it brown). • Gradually whisk in 1½ cups milk until smooth. • Add ½ packet cream and mix well. • Add sauce spices (black pepper, salt, paprika, chili powder, oregano). • Cook until the sauce thickens slightly. 4. Combine Everything: • Add cooked pasta to the sauce. • Add the cooked chicken and vegetables back in. • Mix well until everything is coated in the creamy sauce. 5. Serve Hot: Garnish with extra chili flakes or parmesan if desired. This pasta has no cheese !! Which is the best thing about it.
