Haitian Paté Kodé, Combo Fried Patty Crispy Haitian fried patty stuffed with chicken, smoked herring, hot dog, egg, cheese, and pikliz. Ingredients Dough 4 cups all purpose flour 1 1/2 cups warm water 1 tsp salt 1 Maggi cube, crushed, or 1 to 2 tsp Maggi seasoning 1/3 cup vegetable oil Oil for frying Filling 6 to 8 chicken drumsticks 2 tbsp Haitian epis 1 tsp salt 1/2 tsp black pepper 1/2 tsp paprika 1 sprig thyme 1 cup water, for stewing 6 hard boiled eggs, sliced 1 cup smoked herring, shredded 1 pack hot dogs, sliced lengthwise 6 slices white cheese, or 6 Laughing Cow wedges 1 to 2 cups pikliz Steps Dough Mix warm water, salt, and Maggi until dissolved. Add flour to a bowl. Pour in the seasoned water and oil. Mix by hand, then knead 6 to 8 minutes until smooth. Cover and rest 20 to 30 minutes. Chicken Season drumsticks with epis, salt, pepper, paprika, and thyme. Stew with about 1 cup water until tender, then shred. Assembly Roll dough thin. Layer cheese, chicken, smoked herring, hot dog, pikliz, then egg. Fold into a half moon, trim edges, crimp with a fork. Fry Heat oil to 350°F. Fry 4 to 6 minutes per side until puffy and deep golden brown. Drain and serve. Add extra pikliz inside when you eat. #patekode #haitianfood #haitianstreetfood #manjeayisyen #haitianrecipe
