After every meal, Enzo will come up to me (Mom) or his dad and cry and whine until he is patted on the back repeatedly until he burps, just like a human baby! Sometimes a word of encouragement helps speed the process along. Only after he burps will he get up and move on with his day. He is 4 years old, and has probably been doing this, twice per day, every day, for about 2.5 or 3 years. When I was my daughter’s age I spent my weekends at jail to see my “dad.” I remember being nervously patted down before I could enter to see him. I’d be scared around the other inmates visiting their family…I’m so thankful my kids have absolutely no idea what that experience is like.🙏💗 I grew up fearing men. one pot marry me chicken…say less 🤌🏻 full recipe below ⬇️ Ingredients: (Serves 4) 500g boneless chicken thighs, skin-on (or breasts) 1 tsp smoked paprika 1 tsp dried oregano 4 garlic cloves, finely chopped 1 onion, diced 1/3 cup sun-dried tomatoes in oil, roughly chopped (patted dry) 1 large zucchini, diced 1 cup risoni/orzo pasta 500ml (2 cups) chicken stock ¾ cup coconut cream ½ cup grated parmesan (plus extra to serve) 2 cups baby spinach leaves Zest & juice of ½ lemon Fresh parsley or basil, to serve Method: 1. Season chicken with paprika, oregano, salt, and pepper. 2. Heat a pan over medium-high heat. 3. Place chicken skin-side down and cook 4–5 mins per side until golden and cooked through. 4. Transfer chicken to a plate, keep warm. 5. In the same pan, add garlic and sun-dried tomatoes, cooking 1–2 mins until fragrant. 6. Stir in zucchini, cooking 2 mins to soften slightly. 7. Add orzo and stir for 1 min, then pour in chicken stock and coconut cream. Stir and bring to a simmer. 8. These crispy chocolate chickpea clusters are a perfect bite-sized treat!🙌🏼😋❤️ Crispy Chocolate Chickpea Clusters - 1 can Chickpeas (Garbanzo beans) drained, rinsed and patted dry. 1-2 tsp avocado oil 2 tsp Cinnamon 1 C dark chocolate chips 1 tsp coconut oil 1/2 C unsweetened coconut flakes (optional) 1-2 Tbsp Roasted pumpkin seeds (optional) Flaky sea salt Drizzle rinsed and dried chickpeas with avocado oil and sprinkle with cinnamon. Air fry in preheated 350 degree air fryer for 30-35 mins. Toast coconut with chickpeas for last 2 minutes of cooking time.
