Haricots au safran & jasmin! 💖 Ingrédients: 1 boîte de haricots judiones 1 échalote 1 gousse d’ail Huile d’olive 6 noix de Saint-Jacques (ou poisson blanc) 15 g de beurre demi-sel 2-3 tiges de thym Sel, poivre 1 pincée de pistils de safran 8 fleurs de jasmin séchées Suprêmes d’orange ou de citron Aneth (optionnel, pour le dressage) Préparation: 1)Commence par ciseler l’échalote en petits dés et couper l’ail en fines lamelles. 2)Dans une petite poêle, verse un fond d’huile d’olive et fais frire doucement l’ail démarrage à froid. Dès qu’il commence à dorer, retire-le immédiatement (attention, il continue de cuire hors du feu). Dépose les chips d’ail sur du papier absorbant et sale légèrement. Réserve. 3)Dans une autre poêle, fais suer l’échalote dans un filet d’huile d’olive avec du sel et du poivre. Écrase les pistils de safran dans un mortier puis verse un peu d’eau chaude pour créer une eau safranée. Laisse réduire légèrement. 4)Rince les haricots judiones, ajoute-les à la poêle et mélange très délicatement pour ne pas les écraser. Ajuste l’assaisonnement et laisse mijoter quelques minutes à feu doux. 5)Essuie les Saint-Jacques à température ambiante. Dans une poêle bien chaude, saisis-les dans la même huile qui servie pour l’ail à feu vif 2 à 3 minutes de chaque côté. Baisse ensuite complètement le feu, ajoute le beurre demi-sel et le thym, puis arrose les Saint-Jacques avec le beurre mousseux pendant 3 à 5 minutes. Retire-les, sale et poivre légèrement. 6)À part, fais infuser les fleurs de jasmin dans de l’eau chaude pendant 5 minutes. Hors du feu, ajoute cette infusion aux haricots et mélange délicatement. Dressage: Dispose les haricots au fond de l’assiette, quelques suprêmes d’orange ou de citron, ajoute les Saint-Jacques, les chips d’ail croustillantes et un peu d’aneth. C’est prêt! Bon appétit♥️
