PAN PITA Ingredientes Harina 0000, 1 kg Levadura fresca7 gr (reemplazable por 50 gr de levadura fresca) Azucar 1 cdita + 100ml agua Agua, 500 ml Aceite de oliva, 60 ml Sal, 10 gr Procedimiento En una jarra echar el agua -a 25°C de temperatura-. Diluir levadura con ½ taza de agua tibia y una cucharada de azúcar, dejando reposar por unos minutos hasta que se forme una espuma y esté lista para usar. En un bowl mezclar la harina y la sal y agregar la levadura, unir muy bien, agregar el aceite y formar una masa. Luego, volcar la masa sobre una mesada limpia y seca y amasar -a mano o con máquina- de 5 a 6 minutos hasta que se vuelva lisa y uniforme. Llevar la masa al bowl, taparla y dejar levar hasta que duplique su tamaño. Precalentar el horno a 250°C y colocar dentro la bandeja donde se hornearán los panes. Espolvorear la mesa con harina, volcar la masa encima y amasar durante un minuto para desgasificar. Dividir en 17 trozos de 80 u 85 gramos cada uno y hacer bollitos. Luego, tomar cada bollito de masa y estirarlo formando un círculo de 12 a 13 cm de diámetro y 1 cm de grosor. Llevar los pancitos a la bandeja previamente calentada, meterlos al horno con una temperatura por encima de los 250°C y dejar cocinar de 12 a 14 minutos.
