Until moving to Maine, I’d never encountered ployes – traditional French Acadian buckwheat flatbreads that bridge the gap between crepes and pancakes. They are a tasty vehicle for whatever you’d like to smear on top whether sweet or savory. The recipe couldn’t be simpler: just water, baking powder, salt, all-purpose flour, and buckwheat flour, cooked in a dry skillet. Unlike regular pancakes, ployes only cook on one side, eliminating the need for flipping. The surface develops distinctive bubbles that create a lacy, honeycomb pattern - all my trypophobes look away! I was surprised byt the greenish tint to my batter, but learned @bouchardfamilyfarm’s silver-skinned (or common) buckwheat, grown in northern Maine, naturally produces this color. À l’époque, c’était un aliment simple mais essentiel pour les familles rurales : juste de la farine, de l’eau et un peu de sel, cuite sur un poêle en fonte brûlant. Pas de levure, pas de sucre, juste la simplicité et la générosité de la cuisine d’antan. Les ployes n’étaient pas seulement un repas : elles représentaient la résilience et le lien entre les familles. On les servait à toutes les occasions, des repas quotidiens aux grandes fêtes, et elles accompagnaient souvent les ragoûts, les viandes ou étaient garnies de sirop d’érable, de beurre, creton et sucre brun. Let’s make some ployes! 🥰 First of all what are ployes? 🤔 If you’re from New Brunswick, especially from the Madawaska Victoria County, you probably know what ployes are. It’s really native of Nova Scotia, but spread to New Brunswick and now it’s a traditional dish in Edmundston and Madawaska, Maine, USA. The Brayons (people from Edmundston) makes them often to accompany a chicken stew, beans, a bouilli de viande salée or on its own. But really ployes can be eaten with anything and anytime of the day. A ploye looks like a pancake or crêpe but not really. It kinda have a yellow/green color. It’s only cooked on one side. It’s very cheap and easy to make. The recipe varies from family to family and is handed down through generations. So if you want to try this Brayon recipe, go for it! 🥰 some grocery stores sells the buckwheat flour but if you know someone from that region, just ask them to send you some. 😉 And if you’re ever in the Edmundston region, some restaurants offers it.
