Beef Pot Roast + Parmesan Mashed Potatoes and Onion Gravy. 😋 Perfect for dinner and the holidays! Recipe is below! 🥩🎄✨ #potroast #roast #beefpotroast #beefroast What you need 🥩🎄✨ 1. 2.25lb Boneless Beef Chuck Roast 2. 3 Garlic Cloves 3. 1 Medium Yellow Onion 4. Carrots (I used 3) 5. Minced Parsley 6. Thyme 7. Baby gold potatoes 8. 4 Cups of Beef broth 9. 2 Tablespoons of Tomato Paste 10. 4 Tablespoons of Real Butter 11. 1 Packet of McCormick Onion Gravy 12. Montreal steak seasoning 13. White pepper 14. Beef bouillon Steps 🥩🎄✨ 1. Prep your veggies first, wash and peel your carrots, wash your potatoes, slice and dice your onion, mince your garlic, and wash your thyme. 2. Season your chuck roast on both sides with Montreal steak seasoning, white pepper, and beef bouillon. Cook on medium heat for 4 minutes on each side until you get a nice crust. Once you get a nice crust remove from heat and set aside for now. 3. In the same pan, add 3 tablespoons of butter and your onions. Sautee for 4 minutes and add your minced garlic. Sautee until fragrant. 4. Add 2 tablespoons of tomato paste and mix well with onions and garlic. 5. After 2 mins add one packet of McCormick onion gravy and mix. 6. Add 4 cups of beef broth and scrape the bottom to get all the flavor. 7. Season your broth to taste, mine needed a little more salt, so I added beef bouillon. 8. Add your beef roast, carrots, baby gold potatoes, and thyme and one tablespoon of butter. Cover and cook for 3 hours at 350 degrees. 9. The tender pieces of beef are cooked with onions, garlic, baby potatoes and big chunks of carrots in a silky red wine reduction. Every bite is a bit of comfort that you can only get with old fashioned home cooking. This Classic Pot Roast includes all the crave-worthy elements that make pot roast a family favorite, including melt-in-your-mouth meat, potatoes, carrots, and a rich, warming broth. Cook it in the oven, Instant Pot, or slow cooker! Instructions: 1)Start by seasoning the beef well, on all sides with salt and pepper. 2)In a dutch oven or heavy pot, heat oil. Brown roast on all sides to lock in moisture and flavor (about 15-min). Transfer to a plate. 3)To the grease left in the pot, add in onions and garlic and saute until onions are translucent (about 2-3 minutes). Then stir in the tomato paste, then flour. At this point the flour will absorb all the oil/ moisture. Add the wine, stir and allow the wine to reduce (1-2 minutes). Add beef broth, a few sprigs of fresh Fresh sage and bay leaves. 4)Transfer the beef back to the pot. Add carrots and potatoes around the beef in the pot. Ingredients: • 4-5 lb chuck roast • 4 tsp salt • 2 tsp black pepper • 1 tbsp ghee, avocado, or olive oil • 1 c red wine (I use Cabernet Sauvignon) • 1 c beef broth • 1 can (6oz) tomato paste • 6 garlic cloves, minced • 1 cup yellow onion, diced • 5 sprigs fresh thyme (or 1 tsp dried) • 1 sprig fresh rosemary (or 1 tsp dried) • 6 carrots, peeled and chopped into 3” chunks • 1.5 lb mixed baby potatoes Directions: 1) Preheat your oven to 325 F. Generously salt and pepper your Chuck roast, both sides. I use about a tsp per pound of salt and 1/2 tsp pepper per pound. 2) Warm a dutch oven on medium high heat then melt your oil of choice. Brown the beef for 5-6 minutes on each side. Remove the beef then sautee your onions until semi translucent, about 5 minutes. (Or just toss your onions in raw like in the video - for this dish it doesn’t make a huge difference) Then return the browned beef to the pan. 3) While the beef browns, in a medium bowl add the wine, beef broth, tomato paste, garlic, thyme, and rosemary. Whisk together then pour over the browned beef. 4) Cover with the lid and bake for 1.5 hours 5) Remove from oven and add the carrots and potatoes. Return to oven and bake for another 2 hours, removing the lid the last 30 minutes (optional). It is ready when the carrots and potatoes are fork tender. This is a great meal prep because the beef can be used in multiple ways. We often make a large batch and freeze a few portions for quick meals too. 🥗Serve as is with a side salad and some sourdough to soak up all that delicious sauce. 🌮Make incredible tacos with the beef and sauce, almost like a birria taco 🍳Make a breakfast skillet with the potatoes, beef, and gravy.
