Jacket Potato, but make it loaded! Fluffy baked potato stuffed with butter & cheddar, topped with juicy chicken, creamy mushroom sauce, and a crunch of golden crispy onions. Pure comfort food in every bite.. Method Jacket Potato • Pierce potato with a fork, microwave for 5 mins. • Rub with olive oil & sea salt, wrap in foil • Air fry or bake at 180°C/350F for 45 mins, then another 10 mins unwrapped. • Cut open, add butter, season, and top with cheddar to melt. Chicken • Season chicken with salt, pepper and thyme. Sear in a hot pan for 3–4 mins each side. • Baste with butter, garlic and rosemary until cooked through. Slice. Creamy Mushroom Sauce • In the same pan, cook mushrooms, onion & garlic until golden. • Add thyme and cook until mushrooms turn golden brown. • Stir in cream & mustard. Simmer until thick. Crispy Onions • Fry onion rings in oil until golden. Drain on paper towel. Assemble • Top your baked potato with sliced chicken. • Spoon over the creamy mushroom sauce. • Finish with crispy onions & parsley. Had to turn my viral baked lasagne jacket into a tray bake for four … because one potato simply isn’t enough when comfort food calls 🥔😂 This is a take on my baked lasagne style jacket potato — just bigger, better, and perfect for feeding four instead of one. Fluffy crispy jackets. Rich leftover Bolognese. Creamy cheesy béchamel. Finished with a golden cheese melt. Would you share this… or keep the whole tray to yourself? 👀 ⸻ 🥔 Lasagne-Style Jacket Potato Tray Bake Serves 4 Ingredients Jackets • 4 large baking potatoes • Olive oil spray • Sea salt & black pepper • 40g garlic butter Filling • 600–700g leftover Bolognese sauce Cheesy Béchamel Sauce • 40g butter • 40g plain flour • 500ml semi-skimmed milk • Black pepper • 100g mixed grated cheese • 30–40g grated Parmesan For layering • 150–200g mozzarella or mixed cheese • Extra Parmesan for topping ⸻ Method 1. Cook the jacket potatoes Pierce potatoes, rub with olive oil and salt. Air fry at 180°C for 45 minutes, then another 10 minutes until crispy. Oven option: 200°C for about 1 hour until fluffy inside and crunchy outside. ⸻ 2. Make the cheesy béchamel Melt butter in a pan over medium heat. Stir in flour and cook for 1 minute. Gradually whisk in the milk until smooth and thickened. Season with black pepper, then stir through mixed cheese and Parmesan until melted and creamy. Set aside. ⸻ 3. Assemble the tray bake Place all 4 crispy jackets into a large tray. Slice open and gently mash the centres with butter, salt and pepper. 👉 Spoon 1 tablespoon of béchamel into each potato and mix through the fluffy middle. Now layer in this order: • Add the leftover Bolognese • Pour over more béchamel sauce • Sprinkle over mozzarella or mixed cheese • Finish with a generous grating of Parmesan ⸻ 4. You have been warned 🥹😮‍💨 We all love a baked potato/jacket potato/ jacky P - they’re the single most reliable base to any good meal. This one is pretty sublime, it’s rich, cheesy and oh so comforting. We reckon you’re gonna want to pop this recipe in your back pocket for a rainy day. @makemiameal_ RECIPE: 2 baked potatoes 1 tbsp vegan butter 1 tbsp olive oil 2 white onions, thinly sliced 3 tbsp vegan white wine 2 tsp flour 1/4 vegan beef stock cube with 125ml water 1 bay leaf 1 tsp fresh thyme 5 dashes of maggi seasoning/soy sauce 1 tsp mustard 2 tbsp oat milk 1 tbsp vegan butter Salt and freshly cracked pepper, to taste As much vegan cheddar as your heart desires 1. Preheat the oven to 200 degrees C/180 fan. Place a pot of heavily salted water over a medium high heat. When the water is simmering, add the baking potatoes, bring to the boil and cook for about 15 minutes. 2. Once the potatoes are cooked, place on a baking tray, drizzle with olive oil and salt and place into the oven for around 45-50 mins, or until fork tender in the middle and crisp on the outside. 3. Whilst the potatoes cook, heat a frying pan over medium heat, add the butter and olive oil. Once melted, add the onions, season with salt and fry for around 30-40 minutes until jammy and a much deeper caramelised brown. 4. Add the vegan wine to the onions and cook off for around 30 seconds. Stir in the flour and fry for another 30 seconds, then pour in the stock along with the bay leaf, thyme and maggi seasoning. Season with salt and pepper to taste. 5. Slice the top off the potatoes, scoop out the middle and mash with plenty of vegan butter, oat milk, mustard, salt and pepper. 6. Spoon the mash back into the potato skins, top with the caramelised onions, vegan cheese and more caramelised onions.
