Rosmarino q.b. Sale grosso q.b. PROCEDIMENTO: Versiamo in una ciotola l’acqua (tenendone 30 ml da parte per dopo). Aggiungiamo il lievito e un cucchiaino di zucchero. Mescoliamo poi versiamo la farina, il sale e la restante acqua. Mescoliamo gli ingredienti (non preoccupatevi, l’impasto risulterà molto appiccicoso, è normale), e copriamo con pellicola e un panno. Trascorsi i primi 30 minuti, facciamo un primo giro di pieghe prendendo il lembo dell’impasto (per aiutarvi inumiditevi le mani) e ruotate per due volte la ciotola. Ripetete questa operazione per altre due volte ogni 30 minuti. Poi fate lievitare il panetto per due ore. Trascorso il tempo versate l’impasto all’interno di una teglia unta (o nel mio caso anche con un po’ di carta forno) e fate riposare 30 minuti. Poi condite con abbondante olio e con i polpastrelli praticate i classici buchi. Aggiungete anche il rosmarino e il sale grosso e cuocete poi in forno statico preriscaldato a 220 gradi per circa 30 minuti. Poi praticate un taglio al centro e farcite a piacere: io ho utilizzato il pesto di basilico, la mozzarella, i pomodori e il prosciutto crudo!
