How I proof croissants at home ! So many croissant failuryes happen at proofing. What you need is warm and humid environment, but NOT over 28°C (82°F) or your butter will melt (and you’ll loose the layers!). Here’s my simple setup: - Oven OFF, light ON - Bowl of boiling water inside - Wait 10 min, check temp with thermometer - Add croissants and monitor regularly It takes at least 2 hours (sometimes much more), so patience is everything here. Fermentation isn’t controlled by the clock - it’s controlled by temperature. Temperature determines how fast fermentation progresses: Warmer dough → faster fermentation Cooler dough → slower fermentation Same dough, same recipe - it might finish in 5 hours on a warm day but take 9 hours on a cool one. The recipe didn’t change, the temperature did. When to temp the dough: -After mixing, to confirm the dough is starting in the ideal range -Mid bulk, to make sure fermentation is tracking with your timeline -Before shaping, for consistency from loaf to loaf Ideal target: 76–80°F after mixing. Warmer = faster. Cooler = slower with more acidity potential. Temperature doesn’t create an airy crumb -proper fermentation does. Temperature simply lets you manage fermentation and make informed adjustments. Understand temperature = understand fermentation. Control fermentation = control the crumb. That’s why cleaning, drying, and proper storage matter so much. Although it may not actually fill the banneton... My dough typically doubles in size during bulk fermentation, then almost doubles again after shaping before it’s ready to bake. How much your dough rises during the final proof depends on a few things, but it mostly comes down to strength. Developing the dough through mixing and enough stretch and folds is what helps it grow. If your dough is higher in hydration or enriched with milk, butter, or egg, it will need more support and development time to build that strength. In this video, I’m using 900 grams of dough in a 1 kilogram banneton, so it didn’t quite fill it but came close. How much yours fills will depend on your dough weight and banneton size. If you want better bread, pick one recipe and stick with it. Make small adjustments and take really good notes each time you bake. Did you know you could proof your croissants overnight at home without a proofer? No more waiting warm water pans in the oven that cause butter leakage or waiting endless hours during the day. Just go to bed and have fresh croissants for breakfast 🤤 Simply shape your croissants around 10PM, and place them on a lined baking sheet. Cover loosely with plastic wrap so the croissants have room to grow.
