I’ve been seeing this all over my feed as a new viral trend, but for me it actually bought back memories- my mum used to make this when I was a kid! Obviously, I had to make it and see if it was the same as I remembered. It’s such a quick easy dessert that can be customised to your own tastes by using different flavours of jelly and fruits to garnish. Plus it’s low calorie and an extra hit of protein to your diet, so it’s completely guilt free. I won’t be forgetting about this one again! What you need: * 1 sachet Sugar-Free Jelly (I used @i_like_aeroplane_jelly raspberry) * 250ml Boiling water * 200g-250g High-protein Greek yoghurt How to make it: 1. Dissolve the jelly crystals in boiling water and let it cool slightly. 2. Whisk in your yoghurt until smooth and slightly bubbly. 3. Pour into ramekins (the glass containers from @decoraustralia are perfect) and pop in the fridge for at least 4 hours (or overnight). 4. Top with fresh berries or a little extra yoghurt. This might be my favorite way I’ve ever used Simply Desserts Sugar-Free Vanilla Pudding 🤍 Warm, fluffy, skillet-cooked, and honestly so easy. No perfection, no overthinking. I mixed everything, poured it in the pan, sprinkled raspberry jel on top, and somehow they turned out soft, fluffy, and delicious. 🍮 Vanilla Raspberry Skillet Pudding Cakes Ingredients (1 serving): • ½ packet Simply Desserts Sugar-Free Vanilla Pudding (dry mix) • 1 egg • ~1 cup unsweetened almond milk • 1–2 tbsp raspberry jel • Toppings of choice (I used dark chocolate, pistachios & goji berries) How to make it: Whisk the dry vanilla pudding mix, egg, and almond milk together until smooth. Heat a non-stick skillet on low–medium heat. Pour the batter into the pan and sprinkle raspberry jel directly on top. Cook gently, flipping once, until set and lightly golden. Plate, add more raspberry jel if you want, and finish with toppings. They come out warm, fluffy, and slightly custard-like inside, such a cozy, sugar-free dessert.
