when it’s finally spring again ❤️ 🍰 Raspberry Vanilla Cake Sponge cake (2 × 18 cm pans – 4 layers) 6 eggs 150 g sugar 180 g flour 50 ml vegetable oil 7 g baking powder 1 tsp vanilla Whisk eggs and sugar until pale, fluffy, and doubled in volume. Add oil and vanilla. Gently fold in sifted flour and baking powder. Divide batter into two 18 cm pans. Bake at 170–180°C (340–350°F) for 25–30 minutes. Cool and slice each cake into two layers (4 layers total). Cook raspberries over medium heat ~10 minutes until broken down. 2. Strain to remove seeds; return liquid to pan. 3. Whisk in sugar and cornstarch. 4. Cook ~25 minutes until thick (about 1½ cups). Chill. Make the Cake 1. Preheat oven to 350°F (175°C). Line a 9×9-inch pan with parchment. 2. Whisk flour, baking powder, baking soda, and salt. 3. Cream butter and sugar for 2 minutes. 4. It’s also quite easy to make, and makes for the perfect guest cake in the summer time! Ingrediens: 3 eggs 150 g sugar 150 g melted butter 150 g buttermilk (any thick dairy would do) Dry’s: Combine the following: 1 tsp vanilla (optional) 1 tsp baking powder 1/2 tsp baking soda 210 g flour 250 g fresh/frozen raspberries folded in 1 tbsp flour 200 g rhubarb cut into tiny pieces For the crumble (streusel): Combine the following ingrediens: 50 g melted butter 100 g flour 2-3 tbsp sugar Instructions: 1. Preheat the oven to 185 °c. Fan. 2. In a bowl combine sugar and melted butter. Add the eggs and whisk for 1 min. 3. Add the buttermilk. 4. Sift and fold in the dry ingrediens. 5. Pour the batter into a 22 or 26 cm. Spring form with baking paper attached. 6. Add half of the rhubarb and raspberries on top followed by 1/3 of the streusel which you crumble on with your hands and then the other half of the fruit & lastly the remaining streusel. 7. Bake in the oven for 45-60 minutes. (Or till a toothpick comes out clean) 8.
