Red cabbage contains anthocyanins (responsible for the red pigment) which is a powerful antioxidant. ๐Ingredients: (adjust serving size as needed) About 1/4 red cabbage (sliced) - 1 cup water - 1 cup white vinegar - 1 tsp salt - 1 tsp maple syrup* Method: -slice cabbage and place in a jar with a tight lid -Combine all bring ingredients in a pot and bring to a boil. And IMMEDIATELY pour into jar, and seal the lid. Let sit for about 30 mins. Store in the fridge! Lasts weeks! *Feel free to use sugar, but I rarely use sugar in my cooking.
