Red Thai curry. I guarantee you can make this in 20 minutes. Ingredients: 3 chilis 1 lime Thai basil 4 chicken thighs 2 cans coconut milk 2 large tbsps Thai red curry paste 1 tbsp peanut butter 1 tbsp fish sauce 1 tsp brown sugar White rice to serve Method: * Slice the chicken into strips. * Add 1 can of coconut milk to a pan and reduce to a slightly thickened consistency. Add the curry paste and cook for around 5 minutes until fully cooked out. * Add the chicken to the pan and mix. Add the peanut butter. * Pour in around half of the second can of coconut milk to create your desired amount of sauce. Add freshly torn Thai basil. Cover and cook for around 10 minutes. * Add the fish sauce and brown sugar. Mix in to combine. * Serve with white rice and topped with freshly squeezed lime juice, chilis and Thai basil. 30 Minute Thai Red Curry ✨ 1.5 lbs chicken thighs, boneless skinless 6 ounces green beans, cut into thirds 1 large red bell pepper, sliced 1/2 medium onion, sliced 3 garlic cloves, grated 1 tsp ginger, grated 4 Tbs red curry paste 13.5 oz can coconut milk 1/2 can water (use can from coconut milk) 1 tsp fish sauce 1/4 cup water + 1 tsp cornstarch Juice from one lime 5 basil leaves, chopped 2 Tbs cilantro, chopped 1 tsp Salt, more to taste 1/4 Black pepper 1 Tbs coconut oil or avocado oil 1. To a hot skillet add coconut oil, grated garlic, grated ginger, and red curry paste. Allow to cook for 1-2 minutes then add thinly sliced chicken thighs, 1/2 tsp salt, 1/4 tsp black pepper and saute 3 minutes. 2. Add in the sliced bell pepper, chopped green beans, sliced onions, coconut milk, and half a can of water (use can from the coconut milk). 3. Season with 1/2 tsp salt and bring to a simmer. Allow to cook 5-6 mins or until the chicken is completely cooked through. Squeezing in the juice from the lime, pour in the cornstarch slurry (1/4 cup water mixed with 1 tsp cornstarch), and fish sauce. 4. Stir together and allow to simmer a couple of minutes so the curry can thicken a bit. Finally garnished with chopped cilantro and basil. Taste and season more if you’d like. Ingredients Chicken marinade * 6 boneless chicken thighs * 1 tsp dark soy sauce * 1 tsp light soy sauce * 1 tbsp oyster sauce * 1 tsp brown sugar * Pinch of black pepper Curry sauce * 1 tbsp oil (I use coconut) * 1 tbsp Thai red curry paste Mae Ploy is best, but it is spicy — adjust depending on what you use. * 1 tbsp finely chopped garlic - frozen works great! * 1 tsp finely chopped ginger * 1 red pepper, sliced * 1 chicken stock cube * 100ml boiling water * 400ml coconut milk * 1/2 tsp brown sugar * Fish sauce, to taste To serve * Jasmine rice Optional garnishes * Fresh red chilli * Spring onions * Crispy chilli oil * Sesame seeds * Thai basil or coriander Method 1. Mix the chicken thighs with dark soy sauce, light soy sauce, oyster sauce, brown sugar and black pepper. Leave to marinate for at least 30 minutes. 2. Pan-fry the chicken thighs until golden, sticky and cooked through. Remove from the pan and rest. 3. In the same pan, add the red curry paste, garlic and ginger. Fry for 1–2 minutes until fragrant. 4. Add the sliced red pepper, brown sugar, coconut milk and the chicken stock cube dissolved in 100ml boiling water. 5. Simmer everything for 5 minutes, then season with fish sauce to taste. 6. Slice the chicken and serve over jasmine rice with the Thai red curry sauce. 7. Stir occasionally so it doesn't burn 7. Optionally add fish sauce and lemon. Taste and adjust to your liking. Add more coconut milk if needed 8.
