Biscoff Protein Cups! Zach always requests these! Easy & delicious, they are like a homemade Reece’s cup biscoff edition 😍 Ingredients: •120g or 200g *low sugar chocolate (see notes) •1 tsp coconut oil Filling: •30g Biscoff spread or almond butter •30g coconut yoghurt (or plant milk) •40g of vanilla or salted caramel protein (I use @macr0mike discount code: amb-noa) Method: Melt your chocolate with coconut oil in 20 second intervals. Place a 1-2 tsp of melted choc in the base of 6 lined muffin cases to make a thin layer. Freeze. In a bowl mix biscoff with yoghurt until smooth. Then mix in protein until a dough forms. Roll into 6 balls and press lightly on the top of the hardened chocolate. Cover with remaining melted chocolate and place in the fridge/freezer until set. 120g will yield a thinner more macro friendly cup, 200g will yield a thicker choccy cup. Keep stored in a sealed container in the fridge or freezer depending on desired consistency. Continue to fold together until a thick dough forms. Scoop a large tablespoon and form into egg shapes using your hands(should get 6 large or 8 medium sized eggs). Place on a dish lined with parchment paper and transfer to the freezer for at least 30 minutes. Melt the chocolate chips and coconut oil until smooth. Dip the eggs in the chocolate to fully coat, shake off excess and place on the parchment paper. REESE’S PIZOOKIE 🍪 If you’ve never had a pizookie you’re truly missing out! Nothing better than an ooey gooey cookie baked in a cast iron and topped with melty vanilla ice cream. The key is slightly under baking the cookie, and the chocolate + peanut butter is just the perfect flavor! Ingredients: -1 stick room temp butter (1/2 cup) -1/4 cup brown sugar -1/4 cup white sugar -2 egg yolks -1 tsp vanilla -1 cup all purpose flour -1/2 tsp baking soda -1/4 tsp salt -12 mini reeces, chopped Instructions: Preheat oven to 350°F. Place butter and sugars in a large bowl and use hand mixer to beat until fluffy. Add egg yolks and vanilla and continue to beat until mixed well. Add flour, baking soda, & salt - use a spatula to mix well. Stir in the chopped reese’s to the dough. Spread out dough in a well greased 9” cast iron skillet. Bake for 13 minutes.
