Tteokbokki-Spicy Korean Rice Cake 🔥Follow us @littlericenoodle for more vegan Asian recipes tteokbokki is one of the most classic Korean street food as well as home dish made with chewy rice cakes brasing in a sauce made with gochujang(Korean chili paste). it is savoury, spicy, and the perfect comfort food in colder days. In this recipe I added vegan morzarella to make it extra cheesy Ingredients(2 portions): tteokbokki 500g garlic 5 cloves, chopped 1 small onion, sliced a chunk of leek, sliced 200g cabbage, sliced 5 tbsp gochujang(Korean chili paste) 2 tbsp gochugaru(Korean chili flakes) 2 tbsp ketchup 2 tbsp sugar 3 tbsp soy sauce 200ml hot water 1 scallion, sliced 1 tbsp toasted white sesame seeds 100g vegan cheese oil Recipe Boil the tteokbokki for 3 minutes, then soak in cold water. In a bowl, mix the gochujang, gochugaru, ketchup, sugar, soy sauce and 3 tbsp water. Heat up a wok/non-stick pan over medium-high heat, once hot add oil, add garlic, onion and leek, stir for one minute until aromatic, add the cabbage, stir for another minute. Add the sauce from last step, stir a little then add the tteokbokki, pour in 200ml hot water. Put the lid on and let it simmer for a few minutes until the sauce thickens, add the vegan cheese, mix for 30 seconds,then sprinkle the scallion and sesame on.

Ingredients: • Rice flour • Gochujang paste • Soy sauce • Water • Spring onion (for garnish) • Sesame seeds (for garnish) Recipe: 1️⃣ Mix rice flour with hot water and knead into a soft dough. 2️⃣ Roll the dough and cut into small rice cake pieces. 3️⃣ Boil the rice cakes for 2–3 minutes until they float. 4️⃣ In a pan add water, gochujang and soy sauce. Mix well. 5️⃣ Add the rice cakes and cook until the sauce thickens. 6️⃣ Garnish with spring onion and sesame seeds.
