I also think not every dish has to be overly complicated… just well executed and balanced! We’ve been keeping it extra fresh and healthy. Sumo citrus salad with honey lime and mint dressing! 🍊 🍍 🫐 And for a no refined sugar Greek yogurt I highly recommend using your favorite plain greek yogurt and drizzle in a healthy dash of vanilla bean paste and your favorite sweetener. Stone fruit season is in full swing and we’re celebrating accordingly with Chef Scott Parker and @woolworths_sa 👨‍🍳🍑✨ Enjoy irresistible tempura nectarines with a fresh green salad, using his step-by-step recipe below. #ExpressoShow INGREDIENTS ● 1 cup cake flour ● 2 Tbsp cornflour 1 large egg ● 1 cup ice-cold sparkling water ● Pinch of salt ● Extra flour for dusting ● Neutral oil for frying (sunflower or canola) ● 4 nectarines, cut into little-finger-sized wedges ● chilli-lime salt METHOD - Lightly dust the nectarine wedges in flour. - Whisk together the cake flour, cornflour, egg, sparkling water and salt to form a smooth batter. - Dip the floured nectarine wedges into the batter, ensuring they’re well coated. - Fry in oil at 180°C until golden and crispy. - Season immediately with chilli-lime salt. - Serve warm as a snack, alongside a simple green-leaf salad.
