Salt Beef Brisket Before Christmas the boys and I went to the salt beef bar in selfridges and had the most delicious salt beef sandwich, it was divine. I’ve been meaning to try and recreate something similar at home. I didn’t make it entirely from scratch as I found the cured brisket online @ocado I added 2 onions, 4 cloves of garlic, 2 bay leaves and the beef to a pan. Covered it with water and simmered it on a low heat for about 3 hours until it was tender. I then let it sit in the water for 30 minutes, drained it and carved. We then built our own sandwiches using bagels, quick pickled onions, dill pickles and English mustard. Add the curing mix to 1.5litres water, bring to a gentle boil and submerge the brisket completely. Cover wrap and seal the container or bowl. 3. Cover and refrigerate for 5–7 days, turning the brisket once a day. Stage 2: Cook 1. Remove the brisket from the brine and rinse well under cold water. 2. Place in a large pot and cover with fresh cold water. 3. Bring gently to a simmer for five mins, skimming any foam. 4. Simmer 3hours, until tender. 5. Salt Pork One of the most important foods in history, salt pork was ubiquitous in 18th century America. Any cut of pork can be salt pork (even the head), but fattier pieces such as shoulder and belly work best. Without refrigeration, salt was the easiest way to prevent spoilage. This version is pork belly, coarse sea salt, bay leaves, and peppercorns. I opted for a dry brine, but wet brining methods were also used extensively at the time. It is essential for salt pork to be soaked in several batches of cold water for at least 24 hours before use. This pork was brined for just three days and it was already salty beyond edibility. Boiling will also remove the salt, but again, several changes of water may be necessary to make it palatable. I plan to use this in several upcoming dishes. Any guesses? 😊 Questions? 28 Day Salt Dry Age 🧂 Dry aging is very different than “dry brining” and “curing”. With dry aging, protein is exposed to just air (no salt), and chemical changes improve tenderness as well as flavor. In this experiment I completely covered a prime grade strip roast in kosher salt. My assumption (concern) was that any and all moisture would escape, leaving us with desiccated and dry beef. However, the results were very different. The beef appeared to be dry aged perfectly! While it was slightly less juicy than a fresh steak (dry aged steaks often are), the flavor was perfect and there was no need for added salt.
