Add the butter to a large pot over a medium-high heat 2. Once melted, add the celery and onions and sauté for 4-5 minutes 3. Season with salt and pepper and add the old bay 4. Next, add the potatoes and fish stock 5. In a separate bowl, whisk the flour into the milk 6. Add the corn to the pot, followed by the milk 7. Bring to a simmer and cook over a medium-low heat for 15 minutes, stiring frequently 8. Add the raw fish to the pot and simmer on low for 10 minutes 9. This recipe uses 2% milk and a roux to make the soup thick and delicious. Prep Time: 15 minutes  Cook Time: 25 minutes  Yield: 16 cups Servings: 8 Ingredients: 🧡 4 Tbsp olive or avocado oil 🧡 1 cup chopped fine celery with green tops (reserve these) 🧡 1 cup or 2 medium onions, peeled and chopped fine 🧡 1 cup leeks chopped fine, about 1 leek 🧡 4 x 6 inch carrots, peeled and chopped fine  🧡 4 fist sized red potatoes, skin on, chopped coarsely 🧡 3 cloves garlic minced 🧡 3 cups chicken stock- homemade is best, otherwise use low sodium variety or water 🧡 3/4 cup clam juice 🧡 3/4 Tbsp freshly ground black pepper 🧡 1 1/2 Tbsp pink Himalayan or other microplastic free salt 🧡 1 Tbsp thyme 🧡 2 tsp Tabasco 🧡 2 tsp Old Bay Seasoning 🧡 1 pound frozen shrimp, peeled and deveined 🧡 2 pounds frozen cod, cubed 🧡 6 cups grass fed 2% milk  🧡 1/2 cup sifted spelt flour 🧡 1 cup grass fed 2% milk 🧡 Salt and pepper to taste Instructions: 1. In a large dutch oven or stock pot, add olive or avocado oil then add celery, onions, leeks and garlic over medium heat. 2. When vegetables have softened, add chicken broth, clam juice, potatoes, carrots, black pepper, salt, thyme, Old Bay and Tabasco sauce. 3. Bring to a boil and reduce to medium-low heat to simmer. Cook for about 8-10 minutes or until potatoes are almost fork-tender. 4. Add shrimp and cod to the stock pot and simmer another 7-8 minutes or until fish flakes easily and shrimp turns pink. 5. Add 6 cups milk.  6. Create roux by combining 1/2 cup flour and another 1 cup milk, whisking well until flour is dissolved. 7. Slowly stir into the chowder until you reach your desired thickness. 8. Stir until thickened and season with salt and pepper to taste. 9. Everyone has their own version, this recipe is my mom’s tried and tested one and I always use it.. It’s very fast to pull together and tastes absolutely incredible. Both my kids always want seconds. 👌🏼 What you need: * 400g mixed seafood inc something smoked * 250g prawns * 100g cooked&shelled mussels would be great in this..I couldn’t source them this time! * 1 tablespoon salted butter, softened * 2 large potatoes, cut into cubes * 1 large carrot, cut into cubes * 1 leek, thinly sliced * 1 onion, diced * 2 tablespoon plain flour (use gluten free alternative if intolerant) * 150ml beer (larger) or white wine (I always use beer, it’s a great alternative!) * 300ml fish stock (chicken/veg stock is great too) * 250ml double cream * 1 Tbsp chopped fresh parsley * 1 tsp chopped fresh dill * Drizzle extra virgin olive oil * Salt and pepper What to do: 1. Heat the oil in a pan over a medium heat, and throw in leeks & onions, then add the butter cooking until leek wilts 3-4 min. 2. Next add the potatoes, carrot. Cook for five minutes 3. Add the flour and cook for two minutes, stirring continuously. 4. Gradually pour in the beer or wine and let it bubble away. 5. Add the stock, bring to the boil, then reduce the heat and simmer for five minutes. 6. Stir in the mixed fish and prawns, simmer for five minutes, then cream (add cooked mussels at this point if you have them! Simmer for 2-3 minutes until warmed through, then stir through the herbs and the most important part…taste and add plenty of salt and fresh ground black pepper until it’s tasting divine! (Be sound with the seasoning) 7. Serve with extra parsley, dill, lemon wedges, and soda bread with lashings of real salty butter. 8. Enjoy! - N x ❤️ EASY Creamy Seafood Chowder   650g/ 1.3lb seafood marinara mix or mixed fresh seafood – fish, squid, prawns/shrimp, cooked mussel meat 50g (3 tbsp) unsalted butter 100g/ 4oz streaky bacon, chopped into 1.5cm / 1/2″ squares 2 cloves garlic, finely minced 1/2 cup chardonnay or other dry white wine (can skip) 1/3 cup flour (50g) 1 litre (4 cups) low sodium chicken stock/broth OR homemade fish stock (avoid store-bought fish stock*) 2 medium carrots, peeled, 7mm / 1/3″ pieces 2 large potatoes, peeled, cut into 1cm / 0.2” cubes 1 cup thickened/heavy cream 1 cup corn (frozen or canned) 2 tsp fish sauce (key!) Pinch white pepper (sub black) SERVING 3 tbsp chives or parsley, finely chopped, for garnish Crusty bread or better yet, garlic bread!   1. Separate cooked seafood (usually mussels, sometimes prawns). Cut large pieces of fish into 2.5cm/1” pieces. 2. Melt butter in large pot over medium.
