I have been PRAYED UP. NAMED. SHAWLED. BLANKETED!!!  By the Elders. The Wise Women Council. The Mother Board. The Indigenous Way. Through Ancient Rites. Galway you never fail to impress

I was enchanted by a visit to “Hup Teck” in Ipoh last year, never quite expecting it to close down. Then I had an idea of creating a ‘master sauce’ used to braise meat. The leftover liquid is strained, then refrigerated or frozen and then ‘recycled’ for the next time. I could prolong this Hup Teck legacy by making their sauces the building blocks of my master sauce! I found a basis for a sauce within a recipe for soy-braised chicken in my mother’s collection. The difficulty as always, was that there were steps but not the precise quantities for the spices that contributed to the flavour profile. Additionally, these were spelled out in Cantonese. After reconstructing the recipe , I simmered this concoction for two hours, during which time the aroma evoked childhood memories. I poached the chicken in the sauce for close to an hour, ladling the sauce occasionally over the chicken, bathing it to achieve a darker hue. The chicken was delightfully moist and tender, complemented by plain noodles shawled with the sauce, refreshed with blanched leafy vegetables. While cleaning up, I scribbled “DO NOT TOSS” to remind myself.
