Line a baking sheet with parchment paper. 2️⃣ In a bowl, mix flour, sugar, baking powder, and salt. Add cold butter and cut it in until mixture resembles coarse crumbs. 3️⃣ Stir in heavy cream and vanilla just until the dough comes together. Do not overmix. 4️⃣ Turn dough onto a floured surface and gently pat into a 1-inch-thick round. Cut into rounds or squares and place on the baking sheet. 5️⃣ Bake for 12–14 minutes until golden brown. Raspberry Shortcakes for Mira! So one of my followers sent me a message a week or so ago, saying how much her daughter Mira loves my content. She sent me a photo of Mira holding a plate of lemon square that she made ALL BY HERSELF, by following my recipe. Needless to say, I was flattered. I'm honoured that I was able to inspire someone to do that. Mira's mom also sent me a photo of some raspberry shortcakes that Mira made, and so I said you know what? I'm making those. This is my best attempt at recreating her shortcakes. I hope she likes them! What are some of your favourite baking recipes? Let us know in the comments below 👇 SHARE YOUR KNOWLEDGE 🧠 Recipe 2 C AP flour 3 tbsp sugar 2 tsp baking powder 1/2 tsp salt 1 stick of butter, cut into small cubes 1 C heavy cream Filling 1 C raspberries 2 tbsp sugar, divided 1/2 C heavy cream, for whipping Start by sprinkling 1 tbsp of sugar over the raspberries. Set aside. Now combine all of your dry ingredients. Add the butter and sort of flatten each piece into a little flake. You want fairly large pieces of butter, so that when you roll out the dough, you can see actual pieces all throughout. This is how the biscuits will be flakey. Once the butter has been cut in, add the cream all at once. Start lifting the flour from the bottom, trying to get all the flour in contact with the cream. Once a rough ball of dough has formed, lightly press it together and wrap with plastic wrap. Rest in the fridge for an hour. Now set the oven to 400'F. Roll out the dough to about a 1 inch thickness. using a 3 inch round cutter, cut out the biscuits. Lay them on a parchment lined baking sheet, and brush with heavy cream. Sprinkle with sugar and bake for about 10 mins. Whip the cream while the biscuits are baking, and add the remaining tbsp of sugar. To serve, simply cut the biscuits in half, add some raspberries, and a big spoonful of whipped cream. Add the top and add another spoonful of whipped cream.
