Butter Bun Maska – Milk Bread Buns Yield: 8 large buns (classic bun-maska size) Ingredients • All-purpose flour (maida) – 360 g • Sugar – 45 g • Salt – 6 g • Milk powder – 12 g • Instant dry yeast – 6 g • Milk (lukewarm) – 190 ml • Unsalted butter (very soft) – 45 g • Vegetable oil – 10 g • Vinegar – 1½ tsp ⸻ Method 1. Mix dry In a bowl, combine flour, sugar, salt, milk powder, and yeast. 2. Hydrate Add milk and vinegar. Knead 3–4 minutes to form a rough dough. 3. Enrich Add butter and oil. Continue kneading until smooth and elastic, 10–12 minutes total. (By hand or mixer — mixer is faster.) 4. First proof Place dough in a lightly oiled bowl, cover with cling wrap. Proof 1½ hours, until doubled. 5. Shape Degas, divide into 8 equal balls (≈82 g each). Place close together on a lined tray. 6. Second proof Cover with a cloth and proof 30 minutes, until doubled. 7. Bake Brush with milk + melted butter wash. Bake at 170°C for ~20 minutes or until golden brown. ⸻ To Serve Slice, load generously with butter, let it melt and ooze. These Soft Milk Buns made with tangzhong are great for breakfast, snacks or may be used as burger buns! Below is the recipe. I used a 9 x 11” rectangular pan, lined with parchment paper. Tangzhong: 175g milk
42g bread flour 

In a sauce pan, mix all the ingredients together and slowly cook on low heat until a soft paste forms. Cover with cling and allow to cool completely before using. You can keep this overnight too if you wish but thaw to room temperature first before using. Main dough: 240g Bread Flour (13% protein) 150g AP flour
20g fine whole meal flour 50g castor sugar 3/4 tsp salt 
4g instant yeast 
98-112g full cream milk + 1 egg (100g + egg = 155g)
40g softened butter
1 tsp vinegar Instructions: 1.In the stand mixer bowl, place all dry ingredients and mix with a whisk until combined.
Add in the milk, egg and all the tangzhong and stir to mix before adding to the dry mixture.
Knead until a smooth dough forms then add in the softened butter and continue to knead to window pane. Add in the vinegar and knead until it is absorbed by the dough.
2.Allow to proof, covered, until doubled in size. Transfer to lightly floured table top and knead gently to de-gas. Divide into 12 equal pieces and roll into balls. Rest for 20 minutes.
3.Shape each portion as desired and place into prepared pan. Proof until doubled again, then egg wash the top.
4.Bake in preheated oven at 170C for 25 minutes or until golden. Tent if the top gets too dark.

They’re softer, richer, and more flavorful than regular breads, with a subtle hint of sweetness from the condensed milk. Recipe makes 16 buns (but you’ll probably need double) @gonnaneedmilk #gonnaneedmilk #ad Main Dough Ingredients: 530g bread flour 240g whole milk 50g heavy cream 60g sweetened condensed milk 20g milk powder 1 large egg 6g instant yeast 8g salt 50g unsalted butter Tangzhong: 20g bread flour 100g whole milk 1. Make the tangzhong. Place all tangzhong ingredients into a small pot. Whisk until no lumps remain. Stir continuously over medium heat until the mixture resembles mashed potatoes. Remove from heat and set aside to cool for 5-10mins 2. To the bowl of a stand mixer, add the tangzhong and all other ingredients except for butter. Using the dough hook attachment, mix for 8-10 mins. Then add the butter and continue kneading for 8-10 mins or until a window pane is achieved. Dough should be tacky but manageable. 3. Shape the dough into a ball, place it into a large bowl, cover, and let rise for 1.5-2hrs or until it’s doubled in size. Meanwhile lightly grease a 11” square pan 4. Punch dough to deflate and divide it into 16 equal sections 5. Shape each section into a ball and place it into the pan. You should have 4 rows of 4 6. Cover and let rise for 30mins-1hr or until almost doubled in size 7. Meanwhile, preheat the oven to 350F. Optional: dust the surface of the buns with some bread flour right before baking. These sweet #buns are perfect to stuff with tons of whipped cream 🤤 This is what you need to make them super #soft and #fluffy: 👉INGREDIENTS 📌For the dough: 500g (4 cups) of flour 7g of dry yeast 25g (2 tbsp) of sugar 240ml (1 cup) of milk 60ml (1/4 cup) of vegetable oil Vanilla extract 40g (2 tbsp) of honey 1 egg 1 tsp of salt Orange (zest) 📌For the brushing: Egg + milk 📌For the cream: 360ml (1 1/2 cups) of heavy cream 30g (1/4 cup) of powdered sugar Vanilla extract 👉METHOD 1. In a bowl with the flour add the yeast and sugar and whisk. Add the milk, oil, vanilla essence, honey, egg, salt, and orange (zest) and mix all together well. 2. Mix until dough is formed. Knead the dough until smooth, soft, and elastic. Cover the bowl with cling film and let it rise for 1 hour, or until double in volume. 3. After time has elapsed divide the dough into 12 pieces (about 80 grams), and roll each piece into a ball. Arrange the balls on a baking tray lined with parchment paper, leaving space between them to rise. Cover with a cloth and let rise until doubled in size, about 1 hour. 4. After the buns are doubled in volume brush them with egg and milk. Transfer to the oven and bake at 180°C/360°F for 15 minutes. Allow cooling completely. 5. In a bowl whip heavy cream, vanilla extract, and powdered sugar. Whip until stiff peaks form. Transfer to a piping bag. 6. Slice each bun across the top, without cutting the base. Fill each bun with the cream and smooth it out with a knife. 7.
