Chicken Tortilla Soup is one of my favorite soups! It’s simple to make and there’s a few shortcuts you can take to simplify this chicken tortilla soup recipe. Chicken Tortilla Soup Recipe 7 Roma Tomatoes 1/2 white onion 1 Poblano, roasted (or 4oz can green chiles) 4 garlic cloves 1 TBsp Chile Powder (Or 1-2 dried Chile pasilla or Chile ancho) 8 c. Chicken Broth 1/2 tsp chicken bouillon 2 c. Shredded chicken (use rotisserie chicken) How to make Chicken Tortilla Soup Dry roast: Place tomatoes & onion on a cast iron skillet. Garlics get taken out first, make sure they don’t burn. I deglaze the pan with water and rehydrate Chiles in the same pan. (broil everything on baking sheet, rotating until blackened on all sides) Tortilla Strips are a must for tortilla soup! Half packet of tortillas In stacks, cut tortillas in half and then in strips of your desired length and width. In about 2/5 cups vegetable oil, fry strips until golden brown. Salt to taste. Garnishes for your Chicken Tortilla Soup: Layer your bowl starting with Tortilla strips at the bottom then soup. Top Tortilla Soup with: Avocado Sour Cream Cilantro Chopped serranos/jalapeños More tortilla strips A squeeze of lime juice! ****Tips: 🌶️To rehydrate Chiles, place in hot water for about 15 minutes. 🍅Straining soup is up to you. I strained the tomato sauce and left a little bit of it in the blender then added the Chiles to blend a second time, then strained again into stock pot.

🇵🇭 Suam na Mais (Filipino Corn Soup) | Soups So Good It Can Cure Any Sickness Ep. 28 Suam na mais is a Filipino corn soup with roots in Pampanga - a province in the 🇵🇭. It’s usually made w/ white corn (malagkit na mais). My grandmother used to make this when I was younger so this holds a special place in my ❤️ It’s honestly one of the tastiest and most comforting soups I’ve ever had and it’s kinda reminiscent of a thin porridge as well 😋 INGREDIENTS: Shrimp/Chicken Stock: - 1 kg of shrimp shells - Chicken stock as needed Suam na Mais - 1 kg of prawn/shrimp - 8 pcs white corn, chopped and half grated - 10-15 cloves of garlic, chopped - 1 white onion, chopped - ½ kilo chicken cuts - Shrimp/Chicken broth as needed - 1 tbsp of patis - 3-5 pcs long green chilies - ½ cup of malunggay leaves - salt and pepper to taste *measurements are just estimates. Taste and adjust w your ❤️ INSTRUCTIONS: - remove and chop corn kernels. grate half including the cob. The natural starch will help thicken the broth. - Make a simple shrimp-chicken stock by simmering shrimp shells. Sear the shrimp meat separately. - sauté garlic and onions. Add the chicken pieces, then pour in the prepared stock. Season with fish sauce and add the reserved corn cobs. simmer for 20–30 minutes, then remove the cobs. - Add the shrimp, along with the grated and chopped corn and allow to thicken. add chilies and malunggay off heat - Serve hot and enjoy! #CookingASMR #ASMR #Soups #filipinofood #Pinoyfood

Short Rib Noodle Soup 🍜 SOUPS THAT DON’T SUCK / episode 57 I was recently in Las Vegas and ate at a restaurant I’ve been wanting to go to for SO LONG. It’s called @bestfriendvegas and they have this oxtail noodle soup on the menu that rocked my world. @chefroychoi I knew I wanted to recreate something like it at home but with short ribs. This all comes together pretty fast because of the pressure cooker but you could definitely use a slow cooker or do it over the stove top as well. Let me know if you try it!! Ingredients: 4-5 bone-in beef short ribs Kosher salt 1 tbsp neutral oil 1 3” piece fresh ginger, halved lengthwise 1 head garlic, halved crosswise to expose the cloves 1 yellow onion, peeled and halved lengthwise 2 tbsp tomato paste 2 tbsp gochujang 2 tbsp soy sauce 1 tbsp rice wine vinegar 6 cups beef broth 6-8 oz instant noodles (1 block/disc per person) Garnish: lime wedges, scallions, cilantro, sesame seeds, sesame oil Full recipe to print out is on the blog as always! You could definitely add any other vegetables you have on hand like spinach or cauliflower. Also frozen vegetables would work great. The greek yogurt gives it such a great creaminess and a little bit of acidity.
