A lot of people think becoming a chef is easy, but to do this job you need multiple qualifications. As a sous chef 5 years into the industry here are some sacrifices I’ve made to progress in kitchens. 1. Time sacrifices. Having to work long shifts, nights, weekends, and holidays. This means missing family events, birthdays and gatherings making it hard to maintain a good work life balance. 2. Doing more than your job description. Starting as a cook I’d ask to do more, push to be on harder sections, come in early or on days off and help the chef if he asked. This shows hunger and drive to become better and puts you as a potential candidate for any moments needed to step up. 3. Discipline. Many cooks delay their chances of promotion by lacking discipline. Coming to shifts hungover, partying every weekend. What you do outside of work often shows up to work with you in one shape or form which hinders your ability to be the best version of yourself. Sacrifice the fun night out and create a weekly routine (gym, meals, sleep). 4. Ego. A lot of cooks ego stops them from becoming good chefs. No matter how much you think you know, someone always knows more. Instead of trying to compete with them, learn from them. That’s how you become great.
