☁️ This soft, buttery, golden cake, topped with honey butter glaze & a fluffy, white cloud of whipped cream frosting, is an absolute treasure. It can soothe your soul, if only for a moment. And goodness knows we need that right now. The recipe is my gift to you 🎁 ☁️ RECIPE 🍯 HONEY BUTTER GLAZE 2 tbs unsalted butter, cubed 1 tbs (21g) honey 1 tbs (15ml) orange juice ¼ cup (30g) powdered sugar, sifted 1 pinch fine sea salt or to taste 🍯 In a small saucepan, melt butter over med-low heat. Whisk in honey, orange juice, powdered sugar & salt until smooth & well blended. Add additional salt to taste if desired 🍯 HONEY CAKE 1 cup (128g) AP flour, sifted 1 ¼ tsp baking powder ¼ tsp baking soda ½ tsp fine sea salt ½ cup (113g) unsalted butter, room temp ½ cup (100g) granulated sugar 2 tbs (42g) honey 1 large egg, room temp 1 large egg yolk, room temp 1 ½ tsp pure vanilla extract ¼ cup (59ml) whole milk, room temp ¼ cup (57g) sour cream, room temp 🍯 Preheat the oven to 325ºF (165ºC). Line the bottom of an 8” round cake pan with parchment paper. Grease & flour the insides 🍯In a med. bowl, whisk together the flour, baking powder, baking soda & salt 🍯 In a large bowl, beat butter & sugar together, with an electric mixer at med. speed, until pale & fluffy. Add the honey & beat until well blended. Mix in the egg, egg yolk & vanilla extract in 3 separate additions, making sure each one is incorporated before adding the next 🍯 In a small bowl, whisk the milk & sour cream together until well blended. On low speed, add the flour mixture into the batter in 2 additions, followed by half of the milk mixture after each addition. Beat just until smooth & combined. Do not over mix 🍯 Transfer the batter to the cake pan. Smooth the top with a spatula. Bake until the cake is golden & a toothpick inserted into the center comes out clean, about 25-28 min. Let the cake cool in the pan for 10 min., then remove it from the pan & transfer it to a cooling rack. 🌼🪻🌸Wildflower cake! This was such a fun design to create. I used a palette knife on chilled buttercream to carve the stems and piped fun little flowers. I decided to leave some stems simply carved and piped green buttercream over others to create interest. What do you think of this style?
