Looking for a hearty family meal? This @tasicricesa dish is a must-try. Perfectly fluffy @tasticricesa, every time! CHICKEN BIRYANI Ingredients: 2 cups Tastic rice 8 chicken breasts, thawed 3 tbls cooking oil ½ onion, finely chopped 1 tbls crushed garlic 1 tsp curry powder ½ tsp paprika 1 tbsp biryani masala Salt and pepper, to taste ½ tsp turmeric 2 cinnamon sticks 1 tsp cumin seeds 2 bay leaves Handful fresh coriander, chopped 4 potatoes, chopped into large cubes Preparation: In a large pot, add oil and place at medium heat. Add onion and garlic. Sauté for 2 minutes or until soft. Add fresh coriander and all seasoning. Allow to sauté for 1 minute. Add chicken and sear for 3 minutes, on each side. Then add 200ml water and allow to cook. In another pot, rinse the Tastic rice and bring to boil for 10minutes. (To colour, add a pinch of yellow food colouring or ½ tsp turmeric) Rinse out and strain out water. Set aside. When chicken is 15 minutes into cooking time, add Tastic rice and stir. Add chopped potatoes and stir. Add 100ml hot water and allow to cook for another 15 minutes. Sauce (optional): Ingredients: ½ cup of sour cream Handful finely chopped mint leaves Preparation: Mix together and allow to cool in the fridge, an hour before serving. Perfectly fluffy Tastic rice every time! ✨ Recipe: Ingredients: 2 cups cooked Tastic rice 3 eggs, beaten 1 cup mixed vegetables (peas, carrots, corn) 2-3 green onions, chopped 2-3 cloves garlic, minced 3 tablespoons soy sauce 1 tablespoon sesame oil (or any cooking oil) Salt and pepper to taste Instructions: Prepare the Rice: If using freshly cooked rice, spread it out on a tray to cool and dry slightly. Day-old rice works best as it’s less sticky. Cook the Eggs: Heat 1 tablespoon of oil over medium heat in a large pan or wok. Pour in the beaten eggs and scramble until just set. Remove from the pan and set aside. Sauté the Vegetables: In the same pan, add another tablespoon of oil. Sauté the minced garlic for about 30 seconds until fragrant. Add the mixed vegetables and cook until heated through. Fry the Rice: Increase the heat to high. Add the cooked rice to the pan, breaking up any clumps. Stir-fry for a few minutes. Back to the basics 🫶🏼 Here’s how my mum taught me to make Parboiled Rice 🍚 What you will need: * 2 cups parboiled rice (I used @tasticricesa ) * Water as needed * Salt to taste Method: * Add the rice to a bowl & rinse several times until the water runs clear. * Add the washed rice to a large pot & cover with water. Place on the stove top on high heat. * Allow to come to a boil for 10 minutes. After 10 minutes, you will notice a lot of foam on the surface, this is the excess starch. Pour out the starchy water & rinse the rice once more. * Place it back on the stove top, cover with water & boil for 15 minutes. After 15 minutes, repeat the steps by rinsing & putting it back on the stove. * At this point you can add salt to taste & stir that in. * Allow to boil until the rice is fully cooked. It took about 20 minutes. * Strain in a colander & allow the rice to drain out excess water for about 5-10 minutes. * Empty into your serving dish. * Serve with meals of your choice & enjoy! P.S this recipe doesn’t use a rice cooker as majority of us South Africans never grew up with rice cookers. This is how my family has been making rice for generations, it’s soft, fluffy and not sticky.
