RECIPE 👇🏻 Roast Chicken | Carrots & Parsnips | Cranberry Stuffing | Roast Potatoes | Pan Sauce Roasted Carrots & Parsnips Peel carrots and parsnips Cut in half lengthways Place in the bottom of a large roasting tray Add 1 red onion, quartered Add 3-4 garlic cloves, smashed Season with 1 tsp each of salt, pepper, onion powder, dried tarragon, dried sage and paprika Drizzle with extra virgin olive oil Toss well to coat 🥔 Roast Potatoes Cut potatoes into similar sized pieces Add to a pot of cold water Season heavily with salt Bring to the boil and cook for 5-10 minutes, just until the outside softens slightly Drain Add a good knob of butter to the pot Put the lid on and shake aggressively to rough up the edges Set aside - place on rack Roast Chicken Salt brine - cover chicken in cold water, two pinches of salt, into the fridge for 12-48 hours (I only cooked the crown here weighing around 1.3kg - legs were removed for another dinner) Mix together 2 T butter 2 T extra virgin olive oil 1 t Pinch of salt 1 t Black pepper 1 T Dried oregano 1 t Dried sage 1/2 t Paprika 1/2 t Chilli powder Rub the mixture all over the chicken Get it under the skin and over the skin for maximum flavour Place the chicken on the wire rack above the veg Cranberry Stuffing Finely dice 1 small onion (or ½ a large one) Melt 2ish T butter in a pan Drizzle of Evoo Add onion, season with salt Cook gently on low heat until soft and translucent Add a pinch of dried sage Add 2 handfuls fresh cranberries Add around 200g fresh breadcrumbs Cook on low heat, stirring, until evenly moist Cranberries should blister Line the cavity of the chicken with parchment paper Stuff generously with the breadcrumb mixture You can also stuff some under the skin To Cook Preheat oven to 225°C (425°F) Place the full tray into the oven for 20-30 minutes Reduce heat to 180°C (350°F) until chicken is cooked - Internal temp 74°C (165°F) mine took 1hr 10mins Allow to rest for 20ish minutes ✨ Stuff your gob ✨ Notes in the comments 👇🏻 #roastchicken #fromscratch #thekitchenshift
