CKP AMBAT VARAN I’ve told you about Sumi Ma aka Sumati Gupte my maternal grandmum right? Gorgeous, fantastic cook, became an actress, married my director grandfather Appa (even though he was Brahmin and she was CKP), defiantly cooked all her kalvans in the outhouse while her MIL was alive, super liberal (once told me my skirt was too long 😂), brought up 3 daughters who are amazing cooks and LOVED LOVED LOVED FOOD!!! Now just like every household has a different kind of varan (I like ours the best, thickish and sweet! Check out my stories for the best varan recipe), every CKP household has its own ambat varan recipe as well. Some use tamarind, we use Kokum. And one more sacred combination is that ambat varan is always eaten with popat green, fresh, sour and delicious coriander coconut chutney (please add kairi if you can find some) What combinations are sacred in your house? Ooh I just thought of one more- my Sumi Ma’s Prawn Khichadi with Coconut Milk, Sandgi Mirchi and Pohyacha Papad. Daaaamn I’m hungry now! CKP Ambat Varan Dal 1/2 cup tur dal 3 cups water Vatan 4 tbsp fresh grated coconut 20 pc whole peppercorns 1/4 cup water 1/2 tsp salt 1/4 tsp haldi 3 pc kokum Phodni 1 tbsp tup/ ghee 4 pc garlic cloves with skin METHOD 1. VATAN- Start with blending freshly grated coconut, peppercorns and some part of the cooked (shijavleli) dal and set it aside. 2. COOK- add 3 cups of water to the rest of the cooked dal and mix it well with a (ravi). 3. MIX- Add salt, turmeric and kokam to it and mix well. 4. ADD- the coconut and peppercorn mixture to this, mix it well and cook it again. 5. PHODNI/ TADKA- heat tup/ ghee and 4 smashed garlic cloves. 6. I am currently far away from India and the first thing I want to eat when I come home is #vbtl Here is another simple question I had asked you before- Tell me your favorite recipe from your grandma. I remember crying reading the answers. Not only because of how amazing all the recipes sounded (from crab curry to hibiscus jam) but because of how much everyone loved and missed their grandmas. And what memory-keepers recipe books are, keepers of handwriting and nuances, of seasonality and oiling hair into plaits, into random bursts of pictures of fish markets (I used to shout Paplettttt paplettttt from the window of Sumi Ma’s house) and platters overflowing with prawn khichadi and tables full of crab-claw-crunching family. How precious they are. How priceless. How totally un-measured by standardised measuring cups! I really would love to be the keeper of these memories and recipes! So on our Republic Day, I have some requests- Request no 1-Please leave your fave grandma recipe in the comments here Request no 2- shake down your grandmums (if you are lucky) or mums, maushis, neighbours for what will be a very approximate, andaza type of that recipe Request no 3- make it once WITH THEM with proper measuring cups and spoons (order NOW!). When they keep adjusting (which they will), you write it down in your rough copy 1 tsp + 1/2 tsp + 1/4 tsp Salt etc Request 4- be STRICT! They will try and sneak past you because measuring is very boring Request 5- send me your FAIR copy of the recipe and I’ll try it out and we can make a lovely little Grandma e-book VARAN 1 cup tur dal (soaked in water) 2 cups water 1 tsp salt 1/2 tsp haldi 1/4 tsp hing 1 1/2 tbsp gul Method- 1. Soak dal for 30 min. Rinse water. Put in pressure cooker + 2 cups water & give 3 whistles 2. Cool down and open. Whisk till smooth. Add gul or jaggery. Adjust salt if needed. 3.
