Enticing people based on what’s different, as well as the things we can make feel the same. But let’s be honest - the innovation that brought us rich food cultures across the globe isn’t just going to happen for plantbased cuisine overnight… Part of that journey is experimenting and embracing new techniques and one of my faves - blending beans - has so much potential for creativity given how broadly it can already replicate and replace conventional sauces, purées and thickeners.
