They’re almost completely forgotten. Spent the weekend with @flora.fungi.adventures learning to forage these wild bay nuts with Marko from @treefolkoakland —the processing alone is intense. Peel, roast, crack. The smell can literally give you a headache. But the taste? Gamey, roasted, like dark chocolate met coffee. Blue Chanterelle (Polyozellus multiplex) A rare species found in the Pacific Northwest, often growing in clusters alongside matsutake and golden chanterelles in high-elevation conifer forests. They thrive in old-growth environments where the soil stays cool, damp, and rich in duff. These mushrooms have a firm, rubbery texture and a mild, earthy flavor. When cooked, they deepen in color to a striking dark blue-black and hold their shape well. The season is short, usually late summer through early fall, and they’re rarely found in large quantities. Really great opportunity right now to eat an abundant, local food to the SF bay area. California Bay Laurels produce a boat load of edible fruit that is enjoyed by local wildlife, but the seed is often wasted because it needs to be cooked before it can be eaten. Very rarely are there bugs or mold on the seeds, but be sure to double check. Throw out any seeds that float. Forage at your own risk and always check multiple sources.
