This is Mikes Version of Kim Westons Mind Blowing Vegan Smoked Maple Glazed Ham By Chef or wizard😍🌿 Will you be trying a slice of this? Let’s us know in the comments below! Please see below 👇 for the full recipe. Dough: 2, 5lb bags of All Purpose (~11% gluten) 12 cups cold water ¼ tsp and ⅛ tsp vegan red food dye ½ cup of vegan butter Seasoning mix: ¾ cup smoked Salt 1 tbsp MSG (optional) ¼ cup brown sugar 2 tbsp onion powder ¼ cup mushroom powder Brine: 1 tbsp of salt for every cup of water ⅛ cup of soy sauce 1 tablespoon of browning liquid Glaze: 1/4 cup maple syrup 1/4 cup brown sugar 1 tablespoon liquid smoke flavoring 1 tablespoon Worcestershire sauce ⅛ tsp ground cloves Create one dough ball by dumping one bag of flour into a mixing bowl, adding 6 cups of cold water, and an ⅛ tsp of vegan red food dye. Knead until combined. Create dough ball number two by dumping the second bag in a bowl and adding 6 cups of water, except use ¼ tsp red food dye this time. Knead until combined. Wash each ball in a colander under room temp water for about 5 times until there is no starch left. Rest for 30 minutes. Knead together the two separate balls of dough and then rip and tear in the dry seasoning mix and then the butter. Tie tightly into a cheese cloth. In the brine slow cook for four hours, let cool to around room temp, and then store in the fridge overnight. In a pan, coat the ham with half the glaze and bake at 325F/162C for 15 minutes. Remove, coat with the rest, and bake for another 15 minutes. Then serve!
