there are a lot of key factors that could be the reason why your egg whites are not whipping. they’re sensitive as hell, even humidity could be a factor! Eggs are expensive af right now and my goal with this post is to educate as well as give you some tips on how to waste less eggs ! trust me i’ve BEEN THERE lol 🍳 1. YOUR BOWL — yea it sounds dumb, but if there is even the slightest bit of oil or any type of fat residue in your bowl your egg whites will NOT form stiff peaks… or any peaks for that matter lol. Always use a thoroughly cleaned and dried bowl. I recommend a metal bowl of some kind and I like to wipe my bowl down with vinegar as well just to ensure there’s no fat left behind ! 2. YOUR EGGS — your eggs could be too cold ! using room temperature egg whites is always recommended. they whip faster because cold egg whites don’t hold as much air as room temperature and you need that air to create the volume. However it is generally easier to separate cold egg whites from yolks, so i would recommend separating the eggs cold and then letting the whites sit until they reach room temperature before you whip them. *also try to used the freshest eggs possible ! nothing that’s been sitting in the fridge for too long 🤨 3. YOLK — kind of similar to point number one. egg yolks are a fat and any fat in your whites will prevent them from whipping. if there’s even the slightest bit of yolk in your egg whites it will not whip and egg whites that won’t whip are unsalvageable and you will have to toss them and start over. be careful and take your time when separating your eggs yall. drop more tips in the comments to help each other out ! 👩🏾🍳 #eggwhites #savfromscratch #eggs #bakingtips #explore

Add Acid: Add a small drop of vinegar or lemon juice to the egg whites. This helps stabilize the foam and achieve the right consistency. 4. Start Whipping: Begin whisking the egg whites using a hand or stand mixer on medium speed. If whisking by hand, use a balloon whisk for the best results. 5. Monitor the Peaks: As the egg whites foam and thicken, increase the whisking speed to high. Stop when the egg whites form soft peaks. To check: lift the whisk, and the peaks should hold their shape briefly before softly folding back onto themselves. 6. I eat lots of raw egg yolks, but I don’t eat the whites raw, here’s why… Eggs are an incredibly nutritious food for humans, I prefer corn and soy free eggs, and I eat the yolks raw…💪 It’s just easier for me, and I prefer the taste that way for topping a burger or tossing into a smoothie… But I don’t eat raw egg whites, because they contain avidin, a compound that binds biotin… Biotin in a B-vitamin critical for a healthy metabolism = burning fat, and healthy hair, skin, and nails… It’s primarily found in animal foods like egg yolks and liver, though some plants foods contain biotin as well… But a protein in the egg white called avidin binds to biotin strongly and prevents it absorption… 👎 This means that if you eat raw egg white with egg yolk, or any other food that contains biotin, you won’t absorb the biotin… no bueno… If you cook your eggs, the avidin should be denatured…but as I said previously, I prefer raw egg yolks so I skip the white and throw in the compost, etc… I don’t worry about bacterial contamination on raw egg yolks because any problematic organisms are on the shell of the egg, and don’t touch the yolk… I’ve eaten THOUSANDS of raw eggs and never had a problem… Eggs are a great addition to your #animalbased diet of organs (fresh or @heartandsoilsupplements), meat, fruit, honey, and raw dairy… Welcome to #theremembering🏹
