It’s officially pie season! So far this fall I’ve made 5 pies + a quiche. And the one thing that has stayed consistent is the crust recipe I use. It’s a wildly flaky (think croissant, but easier to make) all-butter crust that can be used for any single-crust pie (pumpkin, custard, no-bake fillings, quiche, etc). To get those layers of flaky pastry you’ll use my puff-and-push-down blind baking method instead of a weighted blind bake. The crust recipe is apart of my pumpkin pie recipe—all the instructions for the pie crust are towards the top of the recipe card, so it’s easy to follow. here’s how to make the EASIEST HOMEMADE PIE CRUST EVER 🥧 the best time of of year is upon us (pie season obvi) and this is my go to, super easy, all-butter pie crust recipe. made all in a food processor, this recipe makes two pie doughs perfect for any and all of your desserts this holiday season. and pro tip: you can prep these doughs now, wrap them tightly and put them in the freezer, then thaw the day before in the fridge and they will be good to go on thanksgiving day 😎 full recipe below! Ingredients • 2 1/2 cups all-purpose flour • 1 tablespoon granulated sugar • 1 teaspoon salt • 1 cup unsalted butter cold, cut into cubes • 4 tablespoons ice cold vodka (or water) Instructions 1. Place the flour, sugar, and salt in a food processor. Add the cold butter cubes to the food processor and pulse until the mixture resembles pebbled wet sand and no large chunks of butter remain, about 30 seconds. 2. Add in the ice cold vodka (or water) and pulse in the food processor for about 1 minute until it begins to form a ball of dough around the blade. 3. Turn the dough out onto a work surface, divide into two equal pieces, and form into flat oval disks and wrap in plastic wrap. Place in fridge for at least 30 minutes (and up to 3 days), or freeze for up to a month! OR if you want to make it right away, work quickly to roll your pie dough into a pie pan, THEN place it in the fridge to set for at least 30 min ;)

The laminating process (folding and rolling) is similar to making croissants and is going to be what gives us a really flakey dough. 1 pie 8 oz flour 8 oz butter 4oz water 2 oz sugar 3/4 tsp salt Combine butter and flour massaging until there are no big chunks of butter then add sugar and salt - mix. Then add water and bring together to form a loose dough. Pour onto a floured surface and begin to roll out. Fold into a square and roll out again. Repeat this process 4-5 times to create a laminated dough for a flakey crust. Peeps, did you even know you can make a press in pie dough with melted butter and a little milk? Well it’s true. All you do is whisk together some flour, baking powder and salt and then add some melted butter and warm milk. Press the dough into your pie plate or roll it out for a galette and voila. Flaky, buttery pie dough is done. Easy Peasy, am I right? The recipe is below or comment MELTED. And I’ll DM you the recipe. 1 ¾ cups all-purpose flour 228 grams ½ teaspoon kosher salt ¾ teaspoon granulated sugar ½ teaspoon baking powder ½ cup unsalted butter, cubed 113 grams 3 tablespoons whole milk To make the dough, whisk the flour, salt, sugar and baking powder in a large mixing bowl. Heat the butter and milk in either a 2-cup glass measuring cup, if you have one, or a glass bowl in the microwave on high, in three 30-second bursts, stirring in between each, or in a small saucepan on the stovetop over medium-high heat, until the butter is melted and the milk is steaming hot—the mixture doesn’t need to boil. Pour the hot liquid over the dry ingredients and stir with a fork until the mixture holds together when squeezed. Turn the dough out onto a work surface and knead a few times until smooth. Use immediately. The dough can easily be pressed into a pie plate or a muffin tin, if making a regular pie or mini pies. If making a galette, roll the dough out between two pieces of parchment paper. And if making hand pies, roll the dough out directly on your work surface – and you likely won’t need to flour it first. Bake all of your magic melted butter treats at 400 degrees, but the time that it takes to bake your pie, galette, hand pies, etc. will depend on your filling. Pie can take an hour, a galette more like 45 minutes and mini pies and hand pies around 30 minutes. Basically you want the crust to be golden brown . . . And NOTE WELL: the crust cannot be par-baked.
