Difficulty: Intermediate Apple Strudel Apples: - 600g sliced apple - 100g brown sugar - Juice & zest of 1 lemon - 2g cinnamon powder - 2g salt Mix well, leave for 4-12 hours in the fridge. The salt and sugar will pull out most of the water. Spiced Butter: - 300g clarified butter / ghee (very hot) - 6 cinnamon quills - 6 star anise - 1 vanilla bean Remove the butter from heat, then add the cinnamon (butter should be hot enough for the cinnamon to sizzle). Wait 10 minutes, add the star anise. Wait another 10 minutes, add the scraped vanilla. Gently stir and allow the butter to cool and infuse for 30 minutes. (Keep this melted—we’ll use it later.) Pastry Dough: - 500g 00 flour (plain flour can work) - 70g melted spiced butter For the dough, each step where it says “Rest” means the gluten must be given time to relax before it can be worked again. Each resting step should be at least 2 hours but can be up to 12 hours in a cool place. Mix well to form a light crumb. In a separate bowl, combine: - 240g warm water - 8g cider vinegar - 5g salt - 1g baking powder Add the mixture to the flour crumb and mix by hand for 2-3 minutes to form a rough dough. Rest. Clotted Cream: - 500g cream - 50g butter Reduce until the total weight reaches 300g, stirring often, chill. Pastry: Cut the dough in half until you have 16 equal balls. Roll each into a ball. Rest. Roll out each ball thin (if you have a pasta machine, great time to use it). Aim for a thickness under 2mm, lining each layer with flour to prevent sticking. Then brush each sheet of pastry with spiced butter; you should have a total of 16 layers. Rest. Assembly: Squeeze excess water from the apples, roll the dough to 4-5mm thick. When building the strudel, I suggest not skipping the plaiting part, this holds the expanding pastry together & also makes it look like something from Harry Potter. Rest. Brush with the remaining spiced butter and bake at 175°C for 60 minutes on a heavy baking tray. If you make this yourself or have any questions - just ask! Mix them in a bowl with brown sugar, cinnamon, lemon juice, and chopped almonds. 3. Roll out the puff pastry on a large piece of parchment paper. Sprinkle the ground almonds evenly over the pastry to prevent it from becoming soggy from the apple juices. 4. Place the apple mixture on the lower third of the pastry, spreading it evenly. želim vam sretan ponedjeljak, a svom koferu želim da mi se sigurno vrati iz Dohe 🥲 Štrudla s jabukama sastojci tijesto 350 g glatkog brašna oko 200 ml mlake vode 1/4 žličice soli 2 žlice ulja Nadjev 1,2 kg jabuka 1 žličica cimeta 2 žlice smeđeg šećera korica i sok limuna 70 g grožđica, po želji 50 ml ruma 60 g krušnih mrvica, tostiranih ulje, za premazivanje tijesta (oko 80 ml) priprema 1. U veću zdjelu dodajte prosijano brašno i sol te sjedinite. Ulijte ulje i postepeno ulijevajte vodu miješajući kuhačom. Kad se formiralo mrvičasto tijesto nastavite mijesiti rukama ili mikserom s nastavcima za tijesto. Ako vam se tijesto čini pretvrdo dodajte još žlicu-dvije vode. Tijesto je gotovo kad se više ne lijepi za zdjelu, mekano je i glatko na dodir. 2. Tijesto podijelite na dva dijela, svaki oblikujte u kuglu i prebacite u nauljene zdjelice. Pokrijte zdjelice plastičnom folijom i ostavite da stoji na sobnoj temperaturi 40-90 minuta (što duže stoji to će se lakše i tanje vući). 3. Za nadjev operite i ogulite jabuke, a grožđice natopite u rumu. Jabuke očistite i narežite na ploške debljine 5 mm. Prebacite ih u zdjelu, dodajte sok i koricu limuna, šećer, cimet i grožđice. Sve dobro promiješajte. 4. Zagrijte pećnicu na 200 stupnjeva. Na stol ili veliku radnu površinu rasprostrite pamučni stolnjak. Posipajte ga brašnom i na sredinu stavite tijesto. Tijesto prvo razvaljajte valjkom za tijesto do dimenzija 50*40 cm. 5. Premažite tijesto polovicom zagrijanog ulja i razvlažite rukama, počevši od sredine prema rubovima. Za štrudlu ostavim tijesto deblje nego inače kako bi moglo upiti sok od jabuka. Razvučenom tijestu odrežite rubove ako vam se čine predebeli i posipajte polovicu tijesta krušnim mrvicama, ostavljajući neposipano 5 cm od svakog ruba. Na krušne mrvice rasporedite polovicu nadjeva. 6. Polovicu tijesta bez nadjeva premažite s 2 žlice ulja. Preklopite neposipane rubove preko jabuka i čvrsto zarolajte štrudlu. Prebacite štrudlu na nauljeni lim. Ponovite s drugim komadom tijesta. Premažite štrudle ostatkom ulja i stavite u pećnicu na 25-30 minuta. Pečenu štrudlu ostavite da se kratko ohladi i poslužite. #apfelstrudel

Der einfachste Apfelblechkuchen der Welt 😍🍎 Mariano und ich haben den einfachsten Apfelblechkuchen mit nur ganz wenigen Zutaten gemacht 😍 Einfach unglaublich lecker 😋 Zutaten: - 2 Äpfel 🍎 - 380 ml Milch - 150 g Mehl - 1 Ei - 30g Zucker - 30 ml Öl - Zimt und Zucker als Topping - Karamellcreme Zubereitung: Für den Teig Milch, Mehl, ein Ei, Zucker und etwas Öl zu einer glatten Masse verrühren 🥰 Anschließend den Teig gleichmäßig auf ein mit Backpapier belegtes Backblech geben 🙏🏼😍 Dann zwei Äpfel 🍎 entkernen, in kleine Stücke schneiden und gleichmäßig auf dem Teig verteilen. Das Blech in den auf 180 °C vorgeheizten Ofen bei Ober- und Unterhitze schieben und etwa 25 Minuten backen. Here is the strudel that I’ll be making during my one man show, “The Tao of Duff,” on Sunday afternoon at @sheffoodandwine! Link is in the bio. This is my great grandmother Mamo’s apple strudel. This is pretty advanced stuff! I still mess it up sometimes, as you’ll see. But don’t worry, it all works out. Mamo’s Apple Strudel- Filling- 9 Fuji apples (use what you want. I like fujis) 130 grams of crushed pineapple 125 grams of sugar 1/2 stick butter 90 grams of pineapple juice Big pinch of kosher salt 1 teaspoon of cinnamon Juice of 1 lemon Zest of 1/4 of an orange Water Dough- 380 grams of bread flour 380 grams of all purpose flour Big pinch of salt 2 whole eggs 50 grams of vegetable oil 350 grams of warm water Also- 2 sticks of clarified butter mixed with 1/2 cup of vegetable oil Cinnamon sugar Chopped toasted walnuts Bread crumbs 1- For the filling, peel and core the apples, chop them up and put in a heavy bottom pot with the pineapple stuff, salt, butter, and enough water to almost cover them. Boil the apples until they turn to mush and the water cooks off. Add the sugar and keep cooking until they start to caramelize and get thick. Add the cinnamon, lemon juice, and orange zest. Remove from the heat and set aside to cool. 2- For the dough, knead together the eggs, oil, flours, salt, and warm water for 10 minutes until it is slightly tacky and smooth. Cover and rest for 1 hour. 3-Place a bed sheet on a 2’x4’ table, sprinkle with flour. Stretch the dough over the table until you can read a newspaper through it. Cut off the excess. Paint the dough with the clarified butter and oil mixture. Sprinkle with cinnamon sugar, walnuts, and breadcrumbs. Make a line of the filling and roll it up. Place it on an oiled, parchment paper lined sheet pan. Bake at 325 degrees for about 120 minutes, basting with butter/oil every 20 minutes until it is golden brown. Slice immediately and dust with powdered sugar when it’s cool.
