Difficulty: Intermediate Apple Strudel Apples: - 600g sliced apple - 100g brown sugar - Juice & zest of 1 lemon - 2g cinnamon powder - 2g salt Mix well, leave for 4-12 hours in the fridge. The salt and sugar will pull out most of the water. Spiced Butter: - 300g clarified butter / ghee (very hot) - 6 cinnamon quills - 6 star anise - 1 vanilla bean Remove the butter from heat, then add the cinnamon (butter should be hot enough for the cinnamon to sizzle). Wait 10 minutes, add the star anise. Wait another 10 minutes, add the scraped vanilla. Gently stir and allow the butter to cool and infuse for 30 minutes. (Keep this melted—we’ll use it later.) Pastry Dough: - 500g 00 flour (plain flour can work) - 70g melted spiced butter For the dough, each step where it says “Rest” means the gluten must be given time to relax before it can be worked again. Each resting step should be at least 2 hours but can be up to 12 hours in a cool place. Mix well to form a light crumb. In a separate bowl, combine: - 240g warm water - 8g cider vinegar - 5g salt - 1g baking powder Add the mixture to the flour crumb and mix by hand for 2-3 minutes to form a rough dough. Rest. Clotted Cream: - 500g cream - 50g butter Reduce until the total weight reaches 300g, stirring often, chill. Pastry: Cut the dough in half until you have 16 equal balls. Roll each into a ball. Rest. Roll out each ball thin (if you have a pasta machine, great time to use it). Aim for a thickness under 2mm, lining each layer with flour to prevent sticking. Then brush each sheet of pastry with spiced butter; you should have a total of 16 layers. Rest. Assembly: Squeeze excess water from the apples, roll the dough to 4-5mm thick. When building the strudel, I suggest not skipping the plaiting part, this holds the expanding pastry together & also makes it look like something from Harry Potter. Rest. Brush with the remaining spiced butter and bake at 175°C for 60 minutes on a heavy baking tray. If you make this yourself or have any questions - just ask! Preheat the oven to 200°C (390°F) top and bottom heat, or 180°C (350°F) fan-assisted. Line a baking tray with parchment paper. 2. Peel, core, and dice the apples into small pieces. Mix them in a bowl with brown sugar, cinnamon, lemon juice, and chopped almonds. 3. Roll out the puff pastry on a large piece of parchment paper. Sprinkle the ground almonds evenly over the pastry to prevent it from becoming soggy from the apple juices. 4. Place the apple mixture on the lower third of the pastry, spreading it evenly. Leave a 2–3 cm border on the sides. 5. Carefully roll the pastry up from the long side, using the parchment paper to help. Place the seam side down and tuck in the ends to seal the filling. 6. Brush the strudel generously with the egg yolk and milk mixture. If desired, sprinkle with almond flakes for an extra crunch and decorative finish. 7. Transfer the strudel to the prepared baking tray and bake in the preheated oven for 25–30 minutes until golden brown. 8. Puff Pastry Apple Strudel ✨ 1 puff pastry sheet (thawed) 2 apples (peeled and cubed) 3 tbsp of butter 1/3 cup of brown sugar 1-2 tsp of cinnamon 1/2 cup of softened cream cheese 1/4 cup of icing sugar 1 tsp of vanilla extract 2 tbsp of granulated sugar Sprinkle of cinnamon 1 egg yolk Preheat oven to 400 F. Roll out puff pastry dough onto a lined baking tray. Visually divide the puff pastry into 3 equal sections. Cut 1 inch strips from the edge of middle section to the outer edge of the puff pastry. (Refer to video for visuals). In a small bowl blend the cream cheese, icing sugar and vanilla extract. Spread mixture onto the middle section of your puff pastry. In a medium saucepan melt butter. Meanwhile, In a bowl combine cubed apple, brown sugar, and cinnamon. Mix to combine and add to melted butter. Add a splash of water and on medium heat cook for about 15 minutes. Allow to cool, and spread overtop the cream cheese mixture in the centre of your puff pastry. Starting at the top, cross each puff pastry strip over to the other side. (This will be crossing over your filling). Continue this step by alternating sides all the way to the bottom. (Refer to video for visuals). Brush the egg wash over top. Sprinkle cinnamon sugar over top (2 tbsp of granulated sugar+sprinkle of cinnamon). Bake for 18-20 minutes. Sprinkle icing sugar over top before serving (optional).
