Puff Pastry Apple Strudel ✨ 1 puff pastry sheet (thawed) 2 apples (peeled and cubed) 3 tbsp of butter 1/3 cup of brown sugar 1-2 tsp of cinnamon 1/2 cup of softened cream cheese 1/4 cup of icing sugar 1 tsp of vanilla extract 2 tbsp of granulated sugar Sprinkle of cinnamon 1 egg yolk Preheat oven to 400 F. Roll out puff pastry dough onto a lined baking tray. Visually divide the puff pastry into 3 equal sections. Cut 1 inch strips from the edge of middle section to the outer edge of the puff pastry. (Refer to video for visuals). In a small bowl blend the cream cheese, icing sugar and vanilla extract. Spread mixture onto the middle section of your puff pastry. In a medium saucepan melt butter. Meanwhile, In a bowl combine cubed apple, brown sugar, and cinnamon. Mix to combine and add to melted butter. Add a splash of water and on medium heat cook for about 15 minutes. Allow to cool, and spread overtop the cream cheese mixture in the centre of your puff pastry. Starting at the top, cross each puff pastry strip over to the other side. (This will be crossing over your filling). Continue this step by alternating sides all the way to the bottom. (Refer to video for visuals). Brush the egg wash over top. Sprinkle cinnamon sugar over top (2 tbsp of granulated sugar+sprinkle of cinnamon). Bake for 18-20 minutes. Sprinkle icing sugar over top before serving (optional). You were asking for my Strudel recipe👇Here is how we do it! And follow me for more Austrian baking 🇦🇹! Use your stand mixer with the hook attachment and knead all ingredients for at least 10 mins. Try to fold it into a seamless ball (I have a reel on the grid how to prep the dough like this). When you have a smooth dough ball, rub it with a good amount of oil, place in bowl, cover bowl and let rest for a couple of hours. You can also make the dough ahead and store in the fridge (I stored it up to 3 days). 400 g all purpose flour 220 ml water 1.5 tbsp oil 1 tsp salt Cover your hands with flour and use the back of your hands to get under the dough. Slowly move your hands towards you, one after the other, and gently stretch the dough. Keep doing this as you walk in circles around the table. Keep getting back into the center to thin out the dough evenly. Be patient! Take your time. If you get a few holes don’t stress too much about it. It I’ll get easier as you get more practice. Just try to not sprinkle butter in that area. When you’re ready, pull the dough over the edges of the table. Woohoo you did it! You have time for a short dance. Sprinkle your melted butter generously all over the dough. Then sugar at your discretion all over. Next some crumbs, leave at least a third of the dough lengthwise where you have just butter and sugar. Add your fruit on top of crumbs. Cut off the think border of the dough with a sharp knife. Fold over the long sides, then grab the sheet on the fruit end and roll! Place seam down on a lined baking sheet, brush with melted butter. Bake at about 370F / 190 C for 30-40 mins until the Strudel looks golden brown and crisp. Let cool off a bit, dust with powdered sugar.
