Here are the tips I wish someone gave me earlier… real, practical, and actually useful for self-taught bakers🥰 1.Mixing speed matters. Low–medium is for combining; high speed only when creaming butter + sugar. Too fast after adding flour = dense cake. 2.Crumb is everything. The moment flour goes in, fold gently and stop as soon as it’s combined. Extra 20–30 sec can ruin the texture. 3.Room-temp ingredients aren’t optional. Cold eggs or butter = tunnels, holes, or gummy streaks. Let them sit 20–30 mins. 4.Stop mixing as soon as the batter looks combined. If it starts looking glossy or stretchy, you’ve gone too far. 5.Don’t rush sugar. Cream until pale & airy, not just mixed. This step = softness. Which one of these tips surprised you the most? I still remember how confused I used to be when my cakes would come out with a big dome on top — no matter how perfect the batter felt. Later I found out it wasn’t just “bad luck” — my oven was running hotter than needed, I wasn’t spreading the batter evenly, and I had no clue about things like the right rack position. Even overmixing the batter was working against me! Once I started adjusting these small things — lowering the temperature, leveling the batter, using the middle rack, and mixing just enough — my cakes finally started baking flat and even. Cookie 101: Honest tips and tricks from a home baker🫶🏻 ✨BUTTER TEMPERATURE MATTERS MORE THAN YOU THINK: • Cold butter cubes → thick, chunky, bakery-style cookies • Soft or melted butter → thinner, flatter cookies Your butter choice literally decides the texture before baking even starts. ✨FROZEN VS ROOM TEMPERATURE DOUGH BALLS: • Frozen cookie dough balls → thick, puffy, less spread • Room temperature dough balls → thinner, more spread If you love chunky cookies, freezing is your best friend. ✨TO CHILL OR NOT TO CHILL? •Want thinner cookies? You can bake the dough right away but chilling for at least 2–3 hours still improves flavor • Want thick cookies? Chill first, then freeze before baking. That’s the real secret to height and structure. Chilling develops flavour. Freezing controls spread. ✨BAKING IS WHERE MOST MISTAKES HAPPEN: You can follow a recipe perfectly… and still mess up at the baking stage. Most home bakers: Overbake Or panic and underbake. I personally don’t walk away from the oven. I bake at 165–175°C (fan oven) until: • The edges are golden brown • The center still looks slightly soft That soft center is exactly what you want. ✨SOFT CENTER DOESN’T MEAN UNDERCOOKED: •Cookies continue baking on the tray after you remove them. •They need about 30 minutes to fully set. •If your cookies are already hard in the center when you take them out, they’re overbaked and they’ll become even firmer once cooled. ✨DON’T OVERMIX: •Once flour goes in, mix just until combined. Overmixing develops too much gluten and makes cookies tough instead of tender. ✨FOR THAT BAKERY LOOK: • Gently bang the tray while cookies are still hot for crinkly tops. • Reshape immediately using a large round cookie cutter while they’re still soft. Yes, you can fix uneven cookies. Always😉 ✨MY PERSONAL FAVORITE TRICK: Add extra chocolate chips/chunks on top immediately after baking while the cookies are still hot. 1. Mise en place: This french term means to gather all your ingredients before you start baking. I know it doesn’t sound like a very big deal specially if you are starting out. I was there. And trust me on this, follow this and you will be doing yourself a big favor. It saves you from so much anxiety and stress. 2. Get an oven thermometer. Every oven is different and in most of the cases, the temperature you set your oven to is not the temperature inside your oven. It’s a must if your want consistently perfect bakes. 3. Immersion blender is underrated. A perfect emulsion is a must to get a perfectly creamy product like ganache, cremeux, pastry cream and more. And immersion blender does it without any buzz. 4. Cup measurement is a big no no. I know it’s controversial but it should not be. Want perfect and consistent results in baking? First rule is to follow weight measurement. 5. There is no alternative to good quality ingredients and I don’t know why more people are mot talking about this. You can have the best recipe and techniques but your cakes will not speak for it unless you are using really good products. 6. Techniques and good recipes are just equally important. I read somewhere that says technique is more important than recipes and I highly disagree. You can’t get good products just with the right techniques if your recipes are not good enough. And you can’t get the right product if your techniques are not right just with good recipes

I know I’m not the only one struggling to line baking pans without creating a mess, which is why this BAKING HACK is an absolute game changer! It’s the easiest way to perfectly line a pan in under a minute without having to measure anything! I used it in my last brownie recipe reel and it worked perfectly! Don’t believe me? Try it for yourself! So how do you do it? Step 1: Put the parchment paper on the pan, making sure it’s big enough on the sides. Step 2: Fold parchment paper in half and place it on the pan so it covers only half of it, with the folded edge in the middle. Step 2: Cut two slits in the paper, one on each side, up to the bottom corners of the pan. Step 3: Open it up, fold the sides in, and push it down. That’s all!
