SAMKEH HARRA FROM SOFRA FOR YOUR CHRISTMAS TABLE - yes all of our recipes have stories of a people who truly love life. Ingredients 1kg White fish fillet (I’ve used blue eye cod) Olive oil 3 garlic cloves crushed Juice of 1 lemon 4 heaped TBS tahini 1 bunch of coriander finely chopped 1 heaped TBS Greek yogurt 1tsp smoked paprika 1/2 tsp chilli powder Salt to taste To garnish 150gr of raw walnuts 1/2 pomegranate deseeded 3 TBS Neutral oil 1/2 tsp Aleppo pepper Method Crush the garlic and salt and add to a large mixing bowl, add the tahini and the lemon juice gradually beating it quickly to break down the tahini and stop it from becoming stiff (you can also add some water here to help). Add the yogurt, paprika, and chili powder and combine before finally adding 2 cups of water. Stir in the finely chopped coriander using a small whisk to mix. Taste and adjust the salt and garlic to your preference, its should have a strong hint of lemon. Preheat the oven to 180 place the large fillet/s (skin down) in a heavy based ovenproof dish and massage with salt, paprika and olive oil. Place the dish with the large fish fillets(skin-down) on your stove top and allow the skin to sear. Do not flip the fillets over, just remove from the heat once the edges have started to take colour and the fish has puffed up and slightly raises. Pour the tahini mixture over the fillets and bake for approximately 25-30mins. The cooking time may vary depending on the size and thickness of the fish fillets. The fish will poach in the water and you will be left with a slightly thickened tahini sauce, if you feel its too thick, add a cup of water whilst baking, around the edges to loosen up slightly. Shake the pan to distribute the water. Fry the walnuts in the oil, drain and set aside. Deseed the pomegranate and set aside. Allow the fish to stand for 5 minutes before garnishing. Crush the walnuts with your hands and scatter all over the fish, along with the pomegranate seeds and a sprinkle of Aleppo pepper. #sundaykitchen #sofra #lebanese #lebanesefood

BAKALIAROS SKORDALIA. Fried salted cod served with potato and garlic dip. A dish traditionally enjoyed on March 25th as the Annunciation of Virgin Mary and Greek Independence Day are celebrated. It’s the 1 of 2 days during Lent that fish is permitted. Personally, I am not the greatest fan of salted cod. I always use fresh blue eye cod instead, coated in a thin and light batter. Χρόνια πολλά! και Ζήτω η Ελλάδα! COD. 1 cup self raising flour 1 cup soda water Salt and pepper to taste Wash and oat try fillets of cod. Combine flour and seasoning to a bowl. Dip fillets in the flour and set aside. Heat enough oil in a pan to shallow fry on medium high heat. Pour the soda water into the flour mixture and whisk well. Dip the flour coated fillets into the batter shaking off any excess. Place into hot oil carefully and fry for approximately 3 minutes each side or until golden. Place on an absorbent towel and season with salt. SKORDALIA. 6 white washed potatoes 3 cloves of garlic 1/3 cup extra virgin olive oil plus more for serving 5 tbsp white vinegar (or to your liking) Salt to taste Wash, peel and roughly chop potatoes and boil until soft. Drain then return to the pot. Grate garlic and pour in the oil and vinegar. Add salt and mash well. Taste and adjust to your liking. Serve and add an extra drizzle of olive oil. Easy to make fish parcels , throwing back to a goodie 🐟🤍 I have used blue eye fillet here, but this would work with any white fish, so delicious. Recipe below serves 2 2 tail fillets blue eye 1 x thinly sliced Désirée potato 1 x sliced shallot 2 bok choy 1 bunch brocollini 1 x pack Enoki mushrooms 3 tbs Soy sauce 3 tbs Mirin Knob of ginger Chilli oil (optional) • lay a rectangular piece of foil and then a sheet of baking paper on top. • In the middle add a thin layer of the sliced potato, followed by thin slices of shallot. Halve the bok choy, wash well to remove any grit and add, followed by the thin Brocollini. • add the fillet of fish, 1.5 tbs soy, 1.5 tbs mirin and half the grated ginger. • wrap the baking paper around your parcel, and then encase and wrap in foil layer. Place into baking dish • Bake in a preheated 220/230° oven for 30 mins till cooked through. • whilst the fish is baking, add a tablespoon of oil to a pan and fry the enoki mushrooms. Season with a pinch of salt and drain onto paper towelling. • Open parcel carefully to release some of the steam. Top with enoki & chilli oil.
