We caught this one last season near our family cabin in Barkley Sound, and I couldn’t stop staring at it… even though we’re totally used to seeing this kind of thing and blue out here. It’s just so wild looking, even when you’ve grown up with it! 😅Okay, so I’m still kind of shocked by how much this video blew up on my Instagram story.. (and 865k views?! I grew up with harvesting lingcod with my family and this blue-green flesh is totally normal for us, but now I’m thinking… maybe this is the perfect opportunity to share some cool facts about it! 🎏For those wondering, they are very common around Vancouver Island, but only 20% of lingcod have this wild blue-green flesh (thanks to a pigment called biliverdin). The best part? It turns white when you cook it, and tastes incredibly delicious🎏 super mild, flaky, and just the right sweetness. Lingcod season just opened coast-wide (always check the regs before you go) and we’re already planning freezer restock missions! 🎏Some anglers believe lingcod with blue flesh taste even better than the regular kind - sweeter and cleaner. There’s no proven difference in taste scientifically, it’s a long-standing debate in the fishing world. The blue ones just feel extra special when you catch them! My 1st ever "Blue" Lingcod!!! This guy measured at 21 and 3/4 inches. Legal size to keep is 22 inches. So close! This guy wanted a 2nd round when released. 😂 Lingcod have blue flesh due to a natural bile pigment called biliverdin, which gives their meat a striking blue-green color. Continuing to answer the why and why not of Lingcod Blueness. Next is the crab theory, especially the idea that crab hepatopancreas or “mustard” might be delivering some precursor that makes lingcod blue. This one is more interesting than the pure copper theory, but it still needs careful framing. The hepatopancreas in crabs is a major site for nutrient storage and detoxification, and official monitoring shows contaminant concentrations there can be far higher than in muscle. So crab viscera absolutely can concentrate biologically active compounds. But the missing piece is crucial: there is still no direct evidence that a lingcod simply absorbs intact biliverdin from crab hepatopancreas and stains its own muscle blue. If crab matters, it probably matters indirectly through prey chemistry, toxin exposure, lipid profile, or liver load—not as a simple “blue in, blue out” transfer.
