°Here’s another video on how to make a bonbon chocolate! I just got this super nice chocolate mold and chocolate stamp set from @silikomartprofessional @bakersworld_indonesia , the [ SemisferA01 & choco stamp A]. With this chocolate mold set you can level up the design your chocolate bonbon product! Simple to use, easy to clean! First, spray colored cocoa butter onto the surface, make sure its set, then warm up your stamp using heat gun around 45-50’C , and insert your stamp onto the mold, make sure not to move and pull out the stamp Once the stamp touches the surfaces . Placing the warmed stamp too long might cause the tempered cocoa butter to spread so make sure to work fast and steady. Then spray with another color or dust powder, then cover with tempered chocolate. And there you go! Using different color combination could really give different character on each design, so its very recommended for those of you chocolate bon bon shop owners. 🍫 Vanilla Chocolate Bonbons (Childhood Memories) Those little freezer treats that felt like treasure every time you opened the fridge. Creamy vanilla centre. Snappy chocolate shell. Pure nostalgia. ⸻ 📝 Ingredients • 200 g dark chocolate (for shell) • 250 g whipping cream (dairy or non-dairy) • 125 g condensed milk • 1 tsp vanilla extract • 1/8 tsp salt ⸻ 👨🏻‍🍳 Method 1️⃣ Prepare the Chocolate Shell • Melt 200 g dark chocolate gently (microwave in short bursts or over bain-marie). • Fill your silicone bonbon moulds completely with melted chocolate. • Tap gently to remove air bubbles. • Turn the mould upside down over a silicone mat or baking paper and let the excess chocolate drip off. • Scrape the surface clean. • Refrigerate until fully set. (That thin chocolate snap? That’s the magic.) ⸻ 2️⃣ Make the Vanilla Cream Filling • Whip 250 g cream to very soft peaks (thick but still soft and smooth). • Add 125 g condensed milk. • Add 1 tsp vanilla and 1/8 tsp salt. • Mix gently until smooth and creamy. Do not overwhip — it should stay silky. (Soft, sweet, reminds you of birthday cakes and old-school ice creams.) ⸻ 3️⃣ Fill the Bonbons • Spoon or pipe the vanilla mixture into the chocolate shells. • Leave a little space at the top for sealing. • Freeze for 30 minutes so the filling firms up. ⸻ 4️⃣ Seal the Bonbons • Rewarm the remaining melted chocolate slightly if needed. • Pour over the mould to cover the filling. • Scrape off excess with a bench scraper. Be quick — the chocolate starts setting fast. • Freeze for 1 hour until completely firm. ⸻ 5️⃣ Unmould & Enjoy • Gently pop them out of the silicone mould. • Store chilled. ⸻ Break one open and that creamy centre will instantly take you back. 🌊🏖️ Beach Bon Bons! These bon bons are one of my recent fave designs and were so easy to create! I finger painted two shades of blue along with some white to represent the waves, and used gold chocolate for the bon bons to represent the beach. Check out that shine! These are filled with a gold chocolate espresso ganache and were little bites of deliciousness. Elements covered in this class … Bonbon Design Each bonbon class covers new design techqniues using easy to find tools, like paint brushes and sponges, and naturally coloured cocoa butters. For these dessert bonbons, I am using a 40mm half sphere mould. This extra space allows us a wider canvas to work on and, therefore, opens up some fun designs. We always want the design to match the flavours, in this case we are sticking to a palette of browns, gold and black. Coffee Caramel An integral part of Tiramisu is coffee and, as coffee can be very overpowering to softer flavours, we need to be careful how strong this caramel is and how much we add to the bonbon to get the right balance between all layers. We’ll go over this more in class. This caramel is a vegan cooked caramel and it’s very versatile as a base recipe for your other caramel needs. Rum Ganache Tiramisu would not be complete without a rum element. For this layer I decided to go with a silky smooth, rum ganache. It’s a great consistency against the other elements and allows the rum flavour to shine through without it getting muddled up with other flavours. You can choose to either use a dark rum that you like or, you could make it a low alcohol bonbon by using Medicine Flower’s Rum Extract. Pipe-able Biscuit No need to cut loads of little discs and struggle to get each bonbon filled just right so the disc doesn’t cause problems. With this pipe-able biscuit, you can just pipe it on to your hearts content. It’ll create an even, flat layer with no difficulties. °Hii in this video i’ll show you how to make chocolate bonbon shell from the stamp i got from the @silikomartprofessional … but using a different series of chocolate mold its CW 2022 from @chocolateworldantwerp to make sure its also compatible to be used with this stamp kit. But since the size is actually has some difference, using the original mold would really give the perfect result compared to this one. Personally i think using lighter based color chocolate will give a better contrast and detail to this stamp design. But if you want to use dark chocolate, you can use a light colored design base so it can creates a balanced contrast to give the best end result.
