Don’t ask me why it’s called pillows but it was one of the savouries I made in December to enjoy before Ramadan 😉 It’s basically 2 pieces of pur filled with mash, cheese and then polony cooked in a tomato chutney. It’s then folded to form what looks like a “pillow” and fried in oil till done. The cheese and mash melt into the polony mixture covered by a crisp outer casing. Have you made it tasted it before? What fillings do you use. If you missed my previous posts I mentioned that since starting The Savoury Revolution ( in 2015) I do not prepare any savouries for Ramadan. I prefer making them in Decembers when my family can enjoy ,which helps out because they constantly hungry during the summer holidays 🤣. It was easy quick light meals that took the pressure off kitchen duties. I prefer wholesome healthy foods for my family in Ramadan since it’s a demanding month on us both physically and spiritually. I hope to inspire you to do the same and leave the savouries for December when everyone can enjoy it without feeling sluggish after a day of fasting. Have you eaten these before? Who’s in? 🤤 Ingredients: - 4 medium potatoes (about 600g) - 4 tbsp cornstarch - 1/2 tsp salt - 1/4 tsp white pepper - 1/2 tsp mushroom seasoning (can be substituted with chicken bouillon powder, etc.) - Parsley (optional) Instructions: 1. Prepare the Potatoes: Cut the potatoes into six pieces and place them in a pot of water. Add a generous amount of salt and boil until the potatoes are soft and easily pierced with a fork, about 15 minutes. Drain and transfer to a large bowl. 2. Season the Potatoes: Mash the potatoes, then mix in salt, mushroom seasoning (or chicken bouillon powder), cornstarch, and fresh parsley. 3. Shape the Potato Pillows: Roll out the mixture to your desired thickness, then cut it into small pillow-shaped pieces. Use a fork to create texture. 4. First Fry: Fry in hot oil over medium heat until golden brown and crispy. 5. Second Fry for Extra Crispiness: Fry again for another 2-3 minutes until they turn a deeper golden brown and become crunchier. 6. Bazlama/ Turkish flat bread / pita bread these soft pillow like flat breads with pockets are simply delicious and so easy to make - chuck everything in your Mixer with hook attachment or knead by hand until smooth allow to proof until double in size - divide into balls and roll out ( about 1-2 cm thick then cover with a cloth and fry in a very hot pan greasing the pan with some oil before each fry - when it starts to puff up turn it around and allow the same thing to happen on the other side then remove from pan and place in a cloth . You can also bake them . 2 cups flour 2 1/4 tsp Instant yeast , 1 tsp salt 1 tsp sugar 1 tblsp oil 85 ml warm water and 1/2-3/4 cup yogurt .
