This is a favorite recipe for kids, and it's very easy to make. Candy Glass Coating 🔮🍭🍊 Commonly known as Tanghulu (🇨🇳) when doing this with fruits, the possibilities are honestly endless in terms of foods you can cover in sugar glass! 🤩 In the video, my syrup ended up cooking slightly unevenly at the very end which I smoothed out by swirling the pot. This means the sugar went slightly beyond the hard crack stage of 300°F-310°F into the next stage which is light caramel (probably hitting 320°F, hence the golden color). Although the two stages are quite similar! Anything beyond this temperature I would steer clear of as you are bordering on burning the sugar if you aren't extremely careful 🫣 The biggest and easiest mistake when doing this is having moisture interrupt the candy coating process. Once liquid is introduced to the syrup it will immediately bubble up and change the chemical structure, thus effecting the way the glass will look. Moisture will also seep through the candy coating even after it solidifies creating a bit of a mess, so your best bet is choosing foods/fruits that have a dry exterior and sealed skin (grapes, strawberries, blueberries, raspberries, and even the clementine cuties I used worked great). Things like a slice of apple will innately have more moisture once the inner fruit is exposed, which will create issues 🙄 I stored the fruits in the video in my fridge for 5+ hours and they kept pretty well (way better than i expected). @cocobellycakes EDIBLE CRYSTALS (recipe and tips) Aren’t these so pretty!? So many of you have been asking about these edible crystals. They are actually made from a Japanese candy called Kohakutou. Tag me if you make them. I’d love to see! INGREDIENTS 1 1/2 cups cold water 10 grams agar agar powder (Telephone Brand is a must!) 2 3/4 cups granulated sugar Optional: 1/4 tsp flavoring. I used lychee extract. A few drops of food coloring INSTRUCTIONS 1. Lightly grease a 8 x 8 square baking pan. Set aside. 2. Fill a medium-sized pot with cold water. Sprinkle agar agar powder on top of the water and allow it to absorb for 5 minutes. 3. Bring the mixture to a simmer and cook for 2-3 minutes while stirring constantly. 4. Add granulated sugar and mix until all the sugar has dissolved (another 2-3 minutes). 5. Remove from heat and add flavoring, if using. 6. Pour the sugar mixture into the greased baking pan. 7. Add in a few drops of food coloring and swirl with a toothpick. 8. Place the pan in the fridge for 2-3 hours until set. 9. To remove the candy from the pan, run a sharp knife around the edges to loosen. 10. Cut into desired shapes. Tips: - Telephone Brand agar agar is a must! - At first, these candies will be very sticky and will stick to your knife, your hands, the table, everything. - Once cut, place the candies between on parchment paper and allow to them to dry. HOMEMADE SOUR GUMMY WORMS (we made 1 batch for each flavor/color shown in the video) 170-180g fresh fruit (~1 cup blended) 14g gelatin powder 3 tbsp lemon juice 3 tbsp honey or agave 1/4 cup sugar + 1 tbsp citric acid for coating Add fruit to blender and blend until smooth. Sprinkle gelatin over lemon juice in a bowl, then stir well and let sit for 5 mins. Add fruit purée & honey to a small saucepan over low heat and stir. Heat the purée enough to melt the gelatin (~120˚F), but don’t boil (this will denature the gelatin). NOTE: Pineapple (and some other fruits, like mango and kiwi) contains enzymes that will essentially “eat” the gelatin and prevent the gummies from setting. To deactivate the enzyme, you must heat the pineapple purée to at least 176˚F for about 8 minutes. Add gelatin mixture to the fruit puree, and stir until it’s dissolved. Let cool slightly.
