All you wanted to know about roasting nuts! What Happens When Ingredients Brown? Once foods reach a temperature of around 300ºF/150ºC, a browning reaction called the Maillard reaction will take effect. Natural sugars break down and slowly turn to caramel. It is crucial to understand the effect of oven heat on your ingredients, and today I roasted nuts at different temperatures to explain this. Nuts roasted at high temperature naturally browned in a shorter amount of time but resulted in over-roasted burned and bitter nuts Nuts roasted at 300ºF/150ºC took longer to roast but ended up with a delicious flavor, an even color, and a very crunchy texture.
