This is my go-to poached chicken recipe. So easy to chuck in a pan, add some Italian herbs if you like and some cracked pepper. I like to poach chicken whilst making dinner ready for lunchboxes during the week. Also freezes well. Save this one for later as you’ll most likely want to come back to it ☺️

CHICKEN 101: PART 1! We’re making an all purpose chicken that you can use in bowls, salads, tacos, you name it! It really goes with everything and it’s the perfect marinade to prep for the week and keep an extra bag or two in the freezer. Directions below and come back tomorrow for cooking instructions, tips and tricks 👍🏼 ALL PURPOSE CHICKEN * 1 1/2 lbs boneless skinless chicken breasts or thighs * 3 tablespoons olive oil * 2 tablespoons soy sauce * 1 tablespoon Dijon mustard * Juice of 1 lemon * 3 cloves garlic, minced or grated * 1 tablespoon honey * 1 teaspoon kosher salt * 1/2 teaspoon black pepper Instructions: TO MARINATE AND FREEZE: 1. Add all the contents to a large zip lock bag or similar leak proof storage. Shake to combine and let the chicken marinate overnight in the fridge. 2. Freeze for up to 3 months. TO DEFROST: 1. Make sure the chicken is in a leak-proof bag. Fill the sink or a large bowl with cold tap water, not warm or hot. 2. Place the bagged chicken fully under the water. If it floats, weigh it down with a plate or heavy bowl. 3. Drain and refill with fresh cold water every 30 MINUTES to keep it at a safe temperature until it has thawed, 1-2 hours. TO COOK: 1. Heat a large skillet over medium heat with a drizzle of neutral oil. Add the chicken to the skillet and cook for 3-5 minutes each side or until the chicken has cooked through to an internal temperature of 165 degrees in the thickest part. 2. In a dutch oven, add the chicken breasts - seasoning them well with salt + pepper 2. Add in all of the remaining spices, along with the olive oil and toss until chicken is coated 3. Pour in the bone broth and place the lid onto the dutch oven 4. Cook at 325° for 90 minutes, until the chicken is cooked through at 165° internally 5. Remove the chicken from the dutch oven, and shred it 6. Pour over some of the delicious bone broth the chicken cooked in Let the chicken cool completely before storing in an airtight container in the fridge for meal prep

this is my go to method for meal prepping shredded chicken - so easy, so quick, and it gives you the juiciest chicken every time 🤌 🔸method – bring a large pot of water to the boil (big enough to fully submerge the chicken) – once boiling, add chicken breasts and nothing else. yes, nothing (seasonings affect the temp + cooking process. you can add crushed ginger/garlic, but no salt, promise it will still taste good and you can season once cooked!!) – cover with a lid and once it comes back to a rolling boil, turn the heat off immediately. – let the chicken sit in the covered pot for 25 minutes. – remove, pat dry, and let cool slightly. – add chicken to a food processor and pulse to shred. we are not wasting time with forks over here 🤠 use straight away or portion up for the week 💪 I love this in my creamy chicken salads - recipes are on my profile for inspo 💘 #highprotein #mealprep #shreddedchicken #hack

I showed me slamming the chicken flat last week and then using it for my lunchtime bowl. So how about I actually share one of my simplest tastiest chicken recipes that is so easy to do as well?! Firstly, you have two choices. You can buy thinly sliced chicken or get chicken breasts and use which ever method you use to flatten them. Then you simply sprinkle them with a little salt and pepper and layer them with some sliced lemon and fresh rosemary. I got the rosemary out of my garden ❤️ hence there is so much! I then spray them with a little olive oil. The original recipe used loads but a little spray goes a long way! And put the container in the fridge until I use it, usually a few hours later. And how do I cook it? I tend to cook this in a pan, but you can use a grill or barbecue if you prefer. And if you like, you can cook the rosemary and lemon with the chicken. I didn’t this time, but sometimes I do. And then you have some really tasty juicy chicken. And yes, Geoff loves this one too, so it’s a favourite of ours especially in the summer.
