✨ CIABATTA FATTA IN CASA – facile, veloce e come quella del fornaio! ✨ Croccante fuori, super alveolata dentro… e con pochissimi ingredienti 😍 📝 Ingredienti • 500 g farina 0 • 380 ml acqua tiepida • 3 g lievito secco • 8 g sale • 10 ml olio extravergine di oliva 👩🍳 Procedimento Mescoliamo farina, acqua e lievito. L’impasto sarà molto appiccicoso… ed è normalissimo 👍 Facciamo riposare 15 minuti. Aggiungiamo sale e olio e mescoliamo bene con cucchiaio o planetaria. Riposo altri 20 minuti. Ora facciamo le pieghe: prendiamo l’impasto dai lati e portiamolo verso il centro. Ripetiamo 3-4 volte, facendo una serie di pieghe ogni 20 minuti. Dopo l’ultima piega, lasciamo lievitare fino al raddoppio (da 1h30 a 2h circa, dipende dalla temperatura di casa). Rovesciamo l’impasto su piano ben infarinato, formiamo un rettangolo e pieghiamo come nel video. Tagliamo le ciabatte della grandezza che preferiamo (infarinare sempre bene!). My ciabatta recipe! Where it all started🥹I shared this video almost 2 years ago & this one hit over 50 million views and got so many of you into bread-making. For anyone who couldn’t find the original recipe, here it is again – simple, no-knead, and still a favourite♥️ Ingredients: 325ml lukewarm water 3g fast action yeast 50ml olive oil 425g strong bread flour 10g salt -like my other no knead bread recipes I like to use a container with a lid to my make my ciabatta dough, I find that it speeds the proving process. -Water should be warm, once you’ve added all of the ingredients, use a spatula to bring it together the dough will be quite sticky. -Allow the dough to rest for 30mins in a warm place. -After the 30 mins, dip your hands in water to avoid sticking and bring the dough together stretching and folding each corner of the dough. -Rest for another 30mins -Now repeat the stretching & folding again and allow to rest for another 30 mins. -Make sure you flour the surfaces well, then use a floured bench scraper or a knife to cut the dough into rough rectangle shapes. -Transfer to a baking tray and allow to rest for 15 mins in the tray then bake until golden brown and crispy! Ciabatta Rolls 🥖 Ingredients 600g (4 cups) bread flour 475ml warm water (32°C/90°F) 12g (2½ tsp) cooking salt (kosher salt) 40ml (¼ cup) olive oil 7g (2¼ tsp) dry yeast Sea salt Method Step 1: Prep and proof dough Place the yeast in a large bowl and mix in water until dissolved. Pour in the oil and add the flour and salt. Mix until just combined and the flour is hydrated. Cover the bowl with a tea towel and let it rest for 30 minutes. Step 2: Stretch and fold the dough Uncover the dough, then with a wet hand, stretch one corner of the dough and fold it over itself. Repeat 4 times until the dough is completely folded over itself. Cover again with a tea towel and let it rest for another 20 minutes. Repeat this process three more times. After the fourth and final round of stretching and folding, let the dough rest for 20 minutes. Step 4: Bake Preheat the oven to 220°C (428°F). Line 2 large baking trays with baking paper. Turn dough out onto a lightly floured work surface. Gently stretch out the dough to an even thickness and lightly flour the top. Cut into 8 rectangle portions and transfer to prepared trays, leaving space in between each one for rising and spreading. Cover lightly with a tea towel and leave for 30 minutes to proof.
