Try these homemade peach ring gummies! 🍑🍒 Made with fresh peaches, natural sweeteners, and gelatin, these treats are easy to make and perfect for satisfying your sweet tooth while sticking to a healthy lifestyle. Ingredients: 180g fresh or frozen yellow peaches (about ⅔ cup blended) 2 envelopes (~7g each, ~14g total) unflavored powdered gelatin 2 tbsp freshly squeezed lemon juice 2 tbsp honey or agave Optional: 1 ½ tsp tart cherry concentrate (or natural red food coloring) Blend the peaches in the blender until they are perfectly smooth. Strain via a fine-mesh sieve is optional. Pour the lemon juice into a small bowl, evenly distribute the gelatin, and thoroughly mix. Give it a five-minute sit. In a small saucepan over low heat, combine peach mixture with honey or agave and whisk to incorporate. Heat the mixture until the gelatin melts (above 120˚F), but avoid boiling it since this will cause the gelatin to become denatured. Stir the gelatin and lemon into the peach puree until the gelatin has fully dissolved. Cool for five minutes. Split the mixture into two bowls. Pour the concentrated tart cherry juice into a bowl and mix. Fill each ring with two droppers at once, and then chill for one and a half hours to solidify. Take out of the molds, transfer to a wire rack, and let for eight hours or overnight. The gummies will get much smaller, have a chewier, gummy texture, and a stronger flavor.
