These Mini Bunny Sugar Cookies are made with pastel M&M’s and are the perfect bite-sized dessert for an Easter brunch or spring party. Of course, you can do this with a homemade sugar cookie recipe and with regular-sized sugar cookies, but I thought it would be fun to make them mini! And they turned out so cute!

Easter baking has started 🐣💕 These mini egg nest sugar cookies are so simple and so so so delicious. Recipe below 👇🏻 225g plain/all purpose flour 150g unsalted butter, chilled 75g caster sugar 150g milk chocolate 1 tsp vegetable oil 2 packs of mini eggs (with some spare) In a bowl add the flour, butter and sugar and bring together into a dough. This may take a little time but continue to rub the butter into the flour until a dough forms. Roll out the dough on a floured surface and cut out 12 rounds. Place onto a lined baking tray and place in the freezer for an hour to chill. Preheat the oven to 180°C and bake the heart cookies for 10 minutes until golden around the edges. Leave to cool completely. Once cooled, melt your chocolate, add the oil (this stops the chocolate setting rock solid). Pipe spirals onto the cookie, building up 2 layers to look like a nest. Add 3 mini eggs and leave to set before enjoying!

Or as an addition to an Easter dessert spread? ☺️ How to: Fill mold halfway up with cookie dough and bake at 320/160C fan for 7 minutes. Cool and remove from the mold. Fill the base of the cavities with smarties minis and spoon over white chocolate halfway up. Tap the mold to help the chocolate settle. Place cookies on top. Set and remove.
