Humpday Meal: corned beef hash So a ‘hash’ is just a pile of chopped up stuff. A British corned beef hash seems to take many forms but this recipe uses the same flavours as I remember from school dinners, whilst also being quite pleasingly edible. I think you’re supposed to boil the potatoes in stock in the same pan you fry everything else in because I don’t see much point in it otherwise; I could still taste the stock but it seemed a waste to throw it away afterwards Ingredients - 3 baking potatoes, cubed (peeled if you prefer) - 1 stock pot in 500ml boiling water - 1 onion, peeled and sliced - 2 small carrots, finely diced - 1 tin corned beef, cubed - Lots of black pepper - Sprinkling of garlic granules - Worcestershire sauce to taste - Grated cheddar to top - Spring onions, sliced to serve Serve with fried eggs and baked beans for the full experience Method - cover the potatoes with the stock and boil for 8-10 mins until they are soft and the stock has reduced. If you want to drain them then do; or add the onions and carrots and cook until softened. Alternatively, if you want to fry the onions and carrot on their own like I did then fry them in butter and then add the drained potatoes once everything is softened - Add in the beef, garlic, Worcestershire sauce and seasoning and continue to fry for another few minutes until the beef is cooked through - Press down in the skillet and grill for around 5 mins before adding the cheese and grilling again until melted - Scatter with spring onions and serve It’s that simple. I was pleasantly surprised with this one, hopefully you will be too! Next week I’m going to see if I can create a crispy pancake without a deep fryer… Happy Humpday!
